Chole

            
            Chole is a very popular Indian dish. Cooked in all Indian houses. Here is my way of cooking Chole. Hope you like it.




Preparation Time: 20 minutes
Cooking Time: 20 minutes

Ingredients:
  • Chickpeas 3/4 cup washed & Soaked in water for 8 hours
  •  1 Onion finely chopped
  • 1 Tomato finely chopped
  • 1 Green Chili finely chopped
  • turmeric powder 1/4 tsp
  • Asafetida 1/4 tsp
  • Red Chili Powder 1/2 tsp
  • Garam Masala 1/2 tsp
  • Chole Masala 2 tsp
  • Ginger Garlic Paste 1 tsp
  • Oil 2 tsp
  • Mustard Seeds 1/2 tsp
  • Cumin Seeds 1/2 tsp
  • Curry Leaves
  • Dried Kasuri Methi 1/2 tsp
  • Coriander Leaves Finely Chopped
  • Chaat Masala 1/2 tsp
  • Salt to taste
Method:
  • Pressure Cook soaked  Chickpeas with salt to taste, turmeric powder, asafetida & enough water until 7 - 8 whistles.
  • Heat oil in a pan.
  • Add mustard seeds. When they splutter, add cumin seeds, curry leaves & finely chopped onions.
  • Sauté the onions till they are translucent. Once they turn translucent add ginger garlic paste. Sauté for a minute.
  • Later add finely chopped tomatoes. Also add red chili powder, chole masala & garam masala.
  • Cover the pan with a lid & let the masala cook on medium flame for 10 minutes till oil separates from the gravy. Add a splash of water if essential. 
  • Now add the boiled chickpeas. Stir well. Cover with a lid again & let it simmer for 5 minutes.
  • Add salt to taste (careful with the salt since chickpeas contain salt as you have added it while pressure cooking chickpeas).
  • Garnish it with chaat masala, dried kasuri methi & chopped coriander leaves.
  • Serve hot !! 
Tips:
  • Whistles for pressure cooking chickpeas may differ depending on the soaking time, quality of chickpeas, your pressure cooker etc. So please check if the chickpeas are cooked properly before using them.
  • Adjust the thickness of the gravy as per your choice.
  • Mash some of the chickpeas for a nice thick gravy. It also gives a nice texture to the gravy.
