Ragi Ladoo

 
            Very few people know about the health benefits of Ragi flour. Its one of the healthy food item. Its loaded with calcium. & yes those who want to reduce weight, Ragi is a good option for them. Today I am sharing with you all a recipe using Ragi flour. Its best for kids. Due to its color, they will feel as if they are eating chocolates. ;-)

            So what are you waiting for, lets get started.



Ingredients:
  • Ragi Flour 1 cup
  • Sugar powder 1/3 cup
  • Cardamom powder 1/5 tsp
  • Ghee 3 & 1/2 tbsp.
  • Dry fruits like almonds, pistachios & cashews ground coarsely - 2 tbsp.

Method:
  • Heat a non stick pan.
  • Add to it ghee.
  • Once the ghee melts, add to it ragi flour. Sauté it for 12 - 16 minutes on low flame or until a lovely aroma comes from the mixture.
  • Add the dry fruits mixture & cardamom powder to it. Sauté again for a minute or so.
  • Remove it in a bowl & let it cool down.
  • Once the ragi mixture cools down a bit (it should still be warm), add to it sugar powder. Mix well with your hands.
  • Now make small balls from this mixture.
  • Store it in an airtight container.
Tips:
  • Shape ladoos when the mixture is still warm. The mixture shouldn't cool down completely.
  • You can also add raisins if you like. I personally don't like them. So not added.
  • Adjust the quantity of sugar according to the sweetness you desire.

Masala Baked Doi



                 As the name suggests, this is not a spicy baked doi. It just contains some Milk masala i.e. cardamom powder, saffron & dry fruits. Its so tasty, I cant describe it. You must make it now to taste this heavenly dessert.

Preparation Time: 10 minutes
Baking Time: 10 - 12 minutes

Ingredients:
  • Condensed Milk 1 cup
  • Yoghurt 2 cups
  • Fresh Cream 3/4 cup or Milk 2 tbsp
  • Cardamom Powder 1/2 tsp
  • Almonds - Cashews - Pistachios Crushed 3 tbsp.
  • Saffron few strands for garnishing

 
Method:
  • Preheat oven to 180 degree Celsius.
  • Mix condensed milk, yoghurt, cream, cardamom powder & crushed dry fruits in a mixing bowl till there are no lumps left.
  • Pour this mixture in small bowls or glasses (oven proof).
  • Garnish it with few saffron strands.
  • Place this bowls in a oven tray. Fill the oven tray with some water.
  • Place this water filled tray of bowls in the preheated oven. Bake for around 10 - 12 minutes.
  • Remove them & refrigerate for at least 2 hours.  
  • Serve Chilled !!

Mawa Modaks - Assorted

 
 
                          There was a Ganpati celebration at my friends place. I had made these assorted mawa modak for Lord Ganesha. When the aarti was done, my friend offered these modaks to everyone else. You wont believe how hit these modaks were ! Every kid was later searching for these cute little modaks. But they were finished in a blink of an eye. Everyone just loved them even the adults. I was hearing my name from every corner of the house that my modaks were a huge hit. Superb looking & Super tasty as well.

                          Sharing my super hit recipe of assorted modak with you all as well. Try it this Ganpati Visarjan.
 
 

Ingredients:
  • 1 cup Mawa
  • 2 tsp. Sugar or to taste
  • Milk Powder 2 tbsp
  • Cardamom Powder 1 tsp
  • Dry Fruits(Almonds, Pistachios & Cashewnuts) chopped roughly 2 tbsp
  • Coco Powder 1 tbsp.
Method:
 
              Mix Mawa with sugar & heat. The sugar starts to melt. Heat it till all moisture is evaporated & it becomes little dry. Add Milk powder to it. Mix well. Switch off the heat & let it cool down. Once the mixture cools down, Divide the mawa mixture in 2 parts.
  • Simple Dry Fruits Mawa Modak
    • Take one part of mawa mixture. Add to it cardamom powder & chopped dry fruits (1 & 1/2 tbsp). Mix well.
    • Now make small round balls from it almost 1 cm in diameter. Keep half of this balls for dual colored modaks aside for later use.
    • Take the modak moulds. Place each ball in the mould. Close the mould & press it. Remove the extra from bottom of the modak mould. Now open it again & remove the formed modak carefully. Do this for rest of the balls.

  • Chocolate Modak
    • Take the other part of mawa mixture.
    • Mix with it coco powder & remaining dry fruits. Mix well.
    • Form small balls out of this dough around 1 cm in diameter. Keep half of this balls for dual colored modaks aside for later use (along with the left over dry fruits modak balls.)
    • Take the modak moulds. Place each ball in the mould. Close the mould & press it. Remove the extra from bottom of the modak mould. Now open it again & remove the formed modak carefully. Do this for rest of the balls.
 
  • Dual Colored Modak
    • Take the leftover both colored balls which we kept aside.
    • Take one white colored & chocolate colored ball together. Stick it to each other & form a ball out of it. (We don't want to mix it with each other. We want to see the dual colors.)
    • Place that dual colored ball in the modak mould. Close & Press it. Remove the extra from the bottom of the modak mould. Open the mould & remove the formed carefully. Your dual colored modak is ready. Do the same with remaining ones.

Instant Saffrony Almond Modak

                       Its Ganesh Chaturthi next week. On this day, many Indian families bring a Ganesh idol in their homes. They decorate the place with flowers. They keep the idol in their homes for 2 or 3 or 5 or 7 or 11 days. It varies from family to family. Everyday they do a pooja of the Ganesh idol. They offer desserts like modak while doing the pooja everyday. Later they immerse the idol in water on the Visarjan Day.

                      Today I am sharing a unique way of making modak. Its made from almonds. They are super tasty. & also healthy since they are made from almonds. Our Ganpati Bappa will also love it ;-)



Ingredients:

  • Almond Flour 1 cup
  • Sugar powder 1/3 cup
  • Milk powder 1 tbsp.
  • Cardamom Powder 1/3 tsp
  • Saffron strands few
  • Water 2 - 3 tbsp.

Method:
  • Boil water. Add saffron strands to it.
  • Let this saffron water cool down a bit. This water should just be warm.
  • Now mix Almond flour, sugar powder, milk powder & cardamom powder in a plate. Now add to it the saffron water little by little at a time. & Try to form a stiff dough out of the mixture.
  • Make very small round balls out of it.
  • Put each ball in the modak shaper. Now close & press it. Open again. Your cute little modak is ready. Repeat the same for other almond balls.


Tips:
  • I used the store bought almond flour. You can also use home made almond flour. Just grind them in a mixie.
  • Adjust sugar to your taste.

Orange Barfi


                    Its Raksha Bandhan tomorrow. On this day, a sister day ties a rakhi on his brother's wrist. Its basically, so that the brothers will protect their sisters in all circumstances. Its been years I have tied rakhi on my brother's wrist. The day I moved to Netherlands, I have missed all the Indian festivals here. The best fun of celebrating festivals is in India itself with family & friends.

                   On this auspicious day, I made Orange barfi. Try it today & enjoy it with your loved ones.




Ingredients:
  • Ricotta Cheese 500 gms
  • Orange juice (along with its pulp) 2 cup
  • Orange zest 2 tsp
  • Sugar 2 & 1/2 tbsp.
  • Milk powder 3 tbsp.
  • Cardamom powder 1/4 tsp
  • Saffron strands few
  • Almonds & Pistachios chopped 2 tbsp.

Method:
  • Heat a non stick pan.
  • Add to it ricotta cheese. It will get creamy first & then after around 15 minutes it will start to dry out.
  • Now add orange juice to it little by little. (Don't add orange juice in one go). Keep stirring continuously.
  • The mixture will again get creamy but when you let it cook, it will dry out after sometime.
  • Add to it sugar (if needed), milk powder, cardamom powder, saffron strands & half of almonds - pistachios chopped mixture.
  • Stir well.
  • When all the moisture has evaporated from it, Remove it in a greased plate. Set it uniformly in the plate. Garnish with the remaining almonds - pistachios chopped mixture.
  • Let it refrigerate for 2 hours.
  • Then cut the set mixture in square shapes.
  • Your Orange barfi is ready.

Tips:
  • If you don't have ricotta cheese, use mawa. It will definitely save your little time.
  • Don't add orange juice in one go. Add little by little at a time.
  • Keep stirring occasionally.
  • The quantity of sugar can be increased or decreased based on your taste.

Saffron Phirni


               We just had been on a vacation to new York. There we went to Chef Vikas Khanna's Michelin starred restaurant "Junoon". The food was so delicious. We loved each & every item that we ordered. We had saffron phirni as dessert there. I never enjoyed phirni before as much as I did here. I thought of giving it a try myself. & wow mine was equally delicious.



Ingredients:
  • Rice 1/2 cup soaked in water for 4 hours atleast
  • Milk 1 litre
  • Saffron strands soaked in 2 tbsp. warm milk
  • Sugar 1/4 cup (or as per your taste. This much is good for me)
  • Cardamom powder 1 tsp
  • Pistachios & almonds chopped

Method:
  • Drain water from the soaked rice.
  • Grind rice into a coarse paste.
  • Mix some milk to the rice paste to avoid forming lumps into phirni.
  • Keep rest of the milk boiling over medium heat. Once milk is reduced a little, add rice-milk paste & sugar to it. Keep it boiling until it thickens.
  • Later add saffron milk, cardamom powder & chopped almonds - pistachios to it.
  • Stir well.
  • Once the desired consistency is achieved, switch it off.
  • Let it cool. Refrigerate it for 4 hours before serving.
  • Serve chilled or warm !!
  • Garnish with few saffron strands & chopped almonds-pistachios.
Tips:
  • You can add sugar as per your taste.
  • Phirni is very thick compared to rice kheer.
  • It tends to thicken once it cools down.

Mango Moong Dal Halwa



                I have been waiting long for Mangoes here in Netherlands. I finally got hold of them. I had a recipe in my mind since long using mangoes which I wanted to try. The moment I got Indian mangoes I tried this recipe. Voila !!! Perfect !!! A delicious dessert to try !!!

                Its Moong dal halwa using mangoes. Tempting !! Isn't it ?? Just try it out. U will love it. If you don't have mangoes u can also use mango puree.

Ingredients:
  • 1/2 cup Moong dal
  • 1 cup hot milk
  • 3/4 cup sugar
  • Cardamom powder 1 tsp
  • Finely Chopped almonds, pistachios, cashews 2 tbsp.
  • 1 cup chopped mango pieces
  • 2 tbsp. ghee
 
Method:
  • Roast moong dal on low flame until you can smell the aroma of roasted moong dal.
  • Once it cools down, grind to a coarse powder.
  • Heat a non stick pan.
  • Add ghee to it.
  • Add roasted moong dal powder to it. Stit for a couple of minutes.
  • Add chopped mangoes to it. Stir well. Try to mash mango pieces while cooking.
  • Add hot milk to it. Stir well. Cook till all the milk is absorbed by moong dal.
  • Add sugar to it. Cook till all the sugar melts.
  • Cook the halwa till it thickens. Keep stirring continuously on low flame.
  • Once it thickens, place a lid on the pan. & cook covered on very low heat for 7 - 8 minutes.
  • Add cardamom powder & chopped nuts. Stir well.
  • Now cook uncovered for couple of minutes.
 
 
Step by Step Picture Illustration:
 
Roast Moong dal on low flame until lovely aroma comes from it.
Grind it to a coarse powder,

Heat ghee in a non stick pan.




Add coarsely ground moong dal powder to the ghee. Stir well.

Add chopped mangoes to it. Cook for 5 minutes. Mash while cooking.
 
Add milk to it. Once all the milk is absorbed add sugar.
Cook till halwa thickens.
Add cardamom powder & dry fruits to it.

 
 
Tips:
  • The quantity of sugar depends on how sweet the mangoes are. It may vary. Better check the sweetness of mangoes first.
  • Cook on low flame & keep stirring continuously.

Carrot Halwa


      I know carrot halwa is a very simple dish. Everyone knows how to cook it. But there are still some people who dont know its recipe mayb theones who just started cooking. So this one is for them. Try this my style of making gajar halwa.



Ingredients:
  • Grated Carrots - 2 cups
  • Milk - 2 cup
  • Sugar - 1 cup
  • 1 tsp Cardamom Powder
  • Almonds & Pistachios for garnishing
  • 2 tsp ghee



Method:
  • Wash, peel & grate the carrots.
  • In a heavy bottomed non stick pan, boil Milk on a medium flame till it is reduced to half.
  • Heat ghee in another pan
  • Add grated carrots to it.
  • Cook the carrots on medium flame for 5 mins.
  • Add sugar & let it cook on medium flame till the sugar melts & carrots become soft.
  • Add the reduced milk to the pan of carrots. Keep cooking till the carrots mixture thickens.
  • Add cardamom powder to it.
  • Cook it until all the moisture evaporates from the mixture.
  • Garnish with chopped dry fruits of your choice.
Tips:
  • Keep stirring while making carrot halwa.
