Minty Curd Dip



               How about a nice fresh tangy curd dip (chutney) to go along with any veg or non veg tikkas or even any cutlets or tikkis. Its such a great dip which goes just perfect with any thing. You can have it just like that also. Try it !! It refreshes your tastebuds.






Preparation Time: 2 minutes
Cooking Time: 2 minutes

Ingredients:
  • 1/2 cup thick yoghurt
  • 1 green chili
  • few coriander leaves
  • few mint leaves
  • chaat masala to taste
Method:
  • Grind green chili, coriander leaves & mint leaves in a mixer.
  • Now add 2 tbsp. of yoghurt to the mixer. Grind again.
  • Remove this in a bowl. Add to it remaining yoghurt & chaat masala to taste.
  • Mix well.
  • Enjoy this dip with any veg or non-veg snacks !!!



Tips:
  • Coriander leaves should be a little more than mint leaves.

Veg Sizzlers - My Style

         
            
                   Veg Sizzlers !! The name itself is so mouth watering !!! There are so many varieties of Veg sizzlers recipes available online. Today I will share my style of making it !! My style is a mix style... Try it for yourself & enjoy !!

                   I know its quite a lengthy process of making it. But its not that lengthy & not at all complicated. Its made under 1 hour. & as the saying says "NO PAIN NO GAIN ! " So if you put in some efforts the outcome is no doubt going to be superb. So just hit it !! :) :)



Preparation Time: 20 minutes
Cooking Time: 50 - 60 minutes

Ingredients:
 
    Falafels
  • Chickpeas 1 cup
  • Garlic Cloves 3 medium
  • Coriander leaves
  • Parsley
  • Green Chilies 3 or 4
  • Cumin seeds powder 1 tsp
  • Coriander seeds powder 2 tsp
  • Salt to taste
  • Black Pepper (almost 1 tsp)
  • Oil
  Potato Wedges
  • Potatoes 3
  • Salt to taste
  • 1 tsp Mixed herbs (Dried Oregano, Dried basil etc)
  • 3 medium garlic cloves chopped
  • 1 tsp chili flakes
  • 2 tbsp olive oil
   Sauce
  • Tomatoes 2
  • Garlic Cloves 2 medium
  • Salt to taste
  • Chili flakes 1 tsp
  • Sugar or honey (Optional)
   Stir Fried Veg Noodles
  • Noodles any 1 cup
  • Salt to taste
  • Oil
  • Garlic Cloves 2 medium
  • Onion 1 medium
  • Colored Bell Peppers 1/4 part of each
  • Baby Corn
  • Mushroom
  • Brocoli
  • Salt to taste
  • Butter
  • Black Pepper




Method:

   Falafels 

 

   Potato Wedges

   Sauce


  • Give 2 slight cuts over the tomatoes.
  • Heat a pan filled with water for boiling.
  • Once it starts boiling, add the tomatoes.
  • After 5 minutes, remove them from boiling water & immerse them in ice cold water. Now remove its peel from where you have given cuts over the tomato. It will be easily removed. Grind them into a fine puree.
  • Heat a wok. Add 1 tsp oil.
  • Add finely chopped garlic to it. When garlic turns slight golden, add the tomato puree.
  • Cover with a lid & let it cook for 5 minutes.
  • Now add 1 cup water to it. Cover again & cook.
  • Add salt to taste & chili flakes. You can also add 2 tsp sugar to it if you wish. Its optional to add sugar.
  • Let the tomato puree cook till its thickened a bit.
  • Once done remove in a bowl.

   Stir Fried Veg Noodles


  • Heat a pan filled with water for boiling.
  • Add to it the veggies which needs a bit boiling before stir frying like broccoli, baby corn or any other veggie you are adding. Cook for 5 minutes in boiling water. Remove them aside.
  • Also boil the noodles as per the instructions along with some salt & oil. Drain them & keep aside.
  • Heat a wok. Add 1 tbsp. butter to it. Also add finely chopped garlic. Sautee till slight golden.
  • Add onions, bell peppers, mushrooms, baby corn, broccoli etc. Stir fry them in butter for a couple of minutes.
  • Add noodles to it.
  • Also add salt to taste & crushed black pepper.
  • Stir well.
  • Set aside.

 
 

    Assembling the Sizzler
  • Heat a sizzler plate (iron plate) over gas. Heat it for 10 - 15 minutes. You can do this simultaneously when you are cooking the stuff.
  • Once it is nice hot, place the iron sizzler plate over its wooden stand. Use a towel or something to lift the plate. It is really hot, don't touch it with your bare hands. Use something to lift it.
  • Now place a lettuce leaf or cabbage leaf over it.
  • In the middle, put some falafel balls.
  • To its one side, place the potato wedges. & to the other side of falafel, place stir fried veg noodles. Top the noodles with sauce.
  • Now from where you can see the iron plate, drop some butter over it using a spoon. You will hear the sizzling sound !!

Masala Dosa

 
 
 
                 Who doesn't love Masala Dosa ?? We are eating it since childhood. In my childhood, as soon as I enter a restaurant, there is no need to check the menu, masala dosa was the fixed snack item to order.


 
Ingredients:
 
     Dosa Batter
    •  Urad dal 1 cup
    • Idli Rice 2.5 cups
    • Fenugreek seeds 1/2 tsp
    • Salt to taste
    • Oil
    • Cooked leftover Rice 1 cup 
      Aloo Sabzi for Masala Dosa
    • Boiled Potatoes 3 or 4 - peeled & mashed with hands
    • 1 Onion sliced thinly
    • 3 Green Chilies Chopped
    • Oil 1 tbsp.
    • Salt to taste
    • Mustard seeds 1 tsp
    • Curry leaves 10 - 12
    • Asafetida a pinch
    • Turmeric powder 1/3 tsp
    • Coriander leaves for garnishing
Method:
  • Refer idli batter to make idli batter. Add little water to the idli batter to make Dosa batter.
  • Refer aloo sabzi to make aloo sabzi for masala dosa.
  • Heat a non stick tawa. Keep heat on medium to high.
  • Add a big spoonful of dosa batter & immediately spread it in a circular manner with the help of back of the spoon to form a thin & round flat dosa.
  • After a minute or so or when you see round spots at the bottom, flip it & cook the other side too.
  • Flip again & add a spoonful of aloo sabzi in the middle. And fold its 2 sides to cover the sabzi.


  • Remove it in a serving plate.
  • Serve hot with chutney & sambhar !!
Tips:
  • Click on idli batter to make dosa batter.
  • Click on aloo sabzi to make aloo sabzi for masala dosa.
  • Mine is a non stick tawa so I don't add oil while making dosa. But if you don't have one, do use few drops of oil while making dosa.

Veg Pulao



              How about a tasty healthy pulao different from the everyday menu of roti, sabzi, dal & Rice ?
     
              It is a one course meal. It fills your stomach easily.


 


Ingredients:
  • Whole Spices - 1 Bayleaf, 7 - 8 black peppercons, 2 cloves, 1 tsp shahi jeera, 1 inch cinnamon stick, 2 cardamom
  • 2 cups rice
  • 4 green chilies slit
  • Salt to taste
  • 1 small potato cut in small pieces
  • 3 - 4 baby corn cut in small pieces
  • 1 medium size carrot cut in small pieces
  • 1/4 cup French beans cut in small pieces
  • 1/4 cup small cauliflower florets
  • 2 tbsp. green peas
  • 1 onion sliced finely
  • 1 tbsp ginger garlic paste
  • Red Chili powder a pinch (Optional)
  • Oil
Method:
  • Cook rice normally the way you cook just with a tbsp. of oil. Use a fork to separate grain from each other.
  • Heat oil in a wok.
  • Add all whole spices & sauté for 20 - 30 seconds or until you smell the aroma of whole spices.
  • Add onions, green chilies & ginger garlic paste. Sauté till onion turns golden brown.
  • Add all the veggies now. Stir fry them. Add little salt & red chili powder just for the veggies. Sauté them. Cover the wok with a lid & let the veggies cook for around 7 - 8 minutes on low - medium heat. Stir well in between. Check if the veggies have cooked. If not cook for a couple of minutes.
  • Add cooked rice & salt (remember salt is added already for the veggies. So add less salt now). Stir well.
  • Cover the wok again with a lid & let the pulao cook on low flame for 5 minutes. Switch off the flame.
  • Enjoy the pulao with some raita & papad.
Tips:
  • Add any veggies of your choice.
  • While cooking veggies, the cooking time may vary from the time I mentioned since it depends on the size & thickness of the veggies you have chopped them.

No huss-fuss Besan Ladoo !!!

 

                  How about traditional Besan ladoos but without much effort in it & very quick ? Yes Yes  You read it right !!
                   
                  Making besan ladoo is a lot of effort if making in a pan. You have to stir it continuously or else it sticks to the bottom of the pan. But how about if you are making it in microwave ? No need to stir it continuously. Also gram flour gets roasted in just 5 minutes if done in microwave or else you have to spend 30 minutes if making in a pan. Also microwave safe bowls get cleaned easily unlike pans.
 
                   Thinking about this way is already relaxing, isn't it ? So why not give it a try !!!

 
 

Ingredients:
  • Gram Flour (Coarse Powder) - 1 & 1/2 cup
  • Sugar powder - 1/2 cup 
  • Cardamom powder - 1/2 tsp
  • Almonds Cashewnuts (chopped in small pieces) - 1 tbsp.
  • salt a pinch
  • Ghee 4 tbsp.
 

Method:
  • Take a microwave safe bowl. Add ghee to it. Microwave it for 30 seconds.
  • Remove the bowl.
  • Add coarse gram flour to it. Stir well.
  • Microwave it for 1 minute. 
  • Remove the bowl. Stir. Again Microwave it for 1 minute.
  • Remove the bowl again. Add chopped almonds & cashewnuts, cardamom powder & salt to the bowl.
  • Now again microwave it for 1 minute.
  • You will now smell the aroma of roasted gram flour.
  • Remove the bowl again & Stir the mixture.
  • Microwave it for 20 seconds the last time.
  • Remove the bowl & stir. Remove the mixture in a plate & let it cool.
  • So in total the mixture is microwaved for 3 minutes 20 seconds.
  • Once the mixture cools down, add sugar powder to it. Stir the mixture well with your hands. Remember to break the lumps of sugar powder with your fingers.
  • Take little mixture from it & form a round ball out of it. Garnish it with a nut of your choice like raisin or pistachio or cashewnut.
 
 
Tips:
  • Use coarse variety of gram flour. If not available, & you are using fine variety, add 1 tsp of semolina along with gram flour. I do so since I get fine variety of gram flour here. It gives a nice coarse texture to besan ladoo.
  • You can add sugar according to your taste. Before shaping the ladoos, check for sweetness & adjust taste accordingly.
  • If you feel the mixture is dry, add more ghee. You can add 1 tbsp. more ghee in the beginning itself, the taste is even more amazing.
