Murg Malai Tikka

`             
                  I love all types of murg kebab. This murg malai kebab too is one of my favorite. Here I am sharing my style of murg malai kebab recipe. Please try it for yourself & enjoy.


Ingredients:
  • Boneless Chicken 500 gms
  • Cheese 1/4 cup
  • Cream cheese 100 gms
  • Greek Curd (Yoghurt) 2 tbsp.
  • Salt to taste
  • Green Chilies 2 finely chopped
  • Freshly Ground Black Pepper 1 tsp
  • Coriander leaves 1 tsp finely chopped
  • Lemon Juice 1 tsp
  • Ginger garlic paste 1 tbsp.
  • Butter

 
Method:
  • Cut chicken in big bite size pieces.
  • Marination 1 - Apply salt to taste, lemon juice & ginger garlic paste to the chicken pieces.
  • Marination 2 - Now take cheese in a plate. with the help of your fingers, scrub it well until a nice paste is formed. Mix cream cheese & yoghurt with it. Also add a pinch of salt, finely chopped green chilies, freshly ground black pepper & finely chopped coriander leaves to it. Apply this cheese mixture to the chicken pieces.
  • Leave it for 4 - 5 hours.
  • Preheat oven to 200 degree Celcius.
  • Insert the chicken pieces in skewers.
  • Place this chicken skewers on a oven tray. Place this tray in oven.
  • Bake it for around 20 - 25 minutes. Give it a flip after 10 minutes & apply butter.
  • Once done wrap the chicken pieces in a aluminium foil. Sprinkle some chaat masala over it. Keep it in aluminium foil for atleast 2 minutes.
  • Serve hot with some salad & curd chutney.

Pani Puri Khakra


                Who doesn't love pani puri ? ^_^ I am a fan of it. I wanted to give it a twist. I wanted the pani puri flavor in something healthy. & an idea struck me. I decided to give our gujarati khakras a taste of pani puri. I thought of giving it a try. & Mission Successful !! Khakras are healthy & my craving for pani puri is also satisfied. ;-)

                   Below is my recipe for the same. Do try it for yourselves too. :-)

Ingredients:
  • Wheat Flour - 1 cup
  • Gram Flour - 1 tbsp.
  • Black Salt - 1 & 1/2 tsp
  • Aamchur Powder - 1 tbsp.
  • Pani puri Masala - 1 tbsp.
  • Sugar Powder - 1 tbsp.
  • Ginger - 1 cm piece
  • Mint leaves - few (around 20 - 25)
  • Coriander leaves - Double the quantity of mint leaves
  • Water as needed



Method:
  • Grind mint leaves, coriander leaves, green chilies, ginger, black salt, aamchur powder, pani puri masala & sugar powder to a fine paste. Add 1 or 2 tbsp. water just to help grinding.
  • Take wheat flour & gram flour in a mixing bowl. Add to it the ground paste. Mix well. Knead to form a dough. Use water as needed.
  • Leave the dough to rest for 30 minutes.
  • Now divide the dough in equal sized small flat round balls.
  • Roll each dough ball into very thin rotis. Use a circle shaped cutter for a nice round shape. Dust some dry flour to make the thin rotis. Make the rotis as thin as possible.
  • Roast each roti on a skillet on medium flame. Press the roti with a potato masher from both sides. The roti should not puff up. If it does, just break the bubble with a fork. Roast it until the roti has some nice brown spots on both sides & crisp.
  • Repeat the above 2 steps for each dough ball.
  • Khakras are ready.
  • Once khakras cool down, store it in a airtight container.


Tips:
  • Adjust the spices according to your taste.
  • Its important to roast the khakras on medium flame to make them crisp.
  • Press the khakras while roasting. they should not puff up. If they do, pierce the bubbles with a fork.

Home made Thalipeeth Flour


                       Thalipeeth is a famous Maharashtrian delicacy. Its a healthy breakfast in most of the households. Today I am sharing with u my recipe for making Thalipeeth flour at home. You can make this dry flour in large quantity & use as needed.

Ingredients:
  • Wheat Flour 1 cup
  • Rice Flour 1/2 cup
  • Bajri Flour 1/2 cup
  • Juwari Flour 1/2 cup
  • Gram Flour / Besan 1/2 cup
  • Ragi Flour 1/2 cup
  • Urad Dal 1/2 cup
  • Salt to taste
  • Coriander seeds 4 tbsp 
  • Red Chili Powder 2 & 1/2 tsp
  • Turmeric Powder 1 tbsp.

Method:
  • Rub urad dal with a slightly damp napkin. Again rub it with dry napkin. This step helps in getting rid of the powder which is dusted on the dal.
  • Now dry roast urad dal in a pan for a couple of minutes on low flame. This helps in evaporating any moisture if there in urad dal. Let the dal cool down & grind it to a fine powder.
  • Similarly dry roast Coriander seeds in a pan for a couple of minutes on low - medium flame. Let it cool & grind it to a fine powder.
  • Now the most simple step. Mixing !! Mix all flours - wheat floure flour, bajri flour, juwari flour, gram flour, ragi flour, urad dal flour, coriander seeds powder, salt to taste, red chili powder & turmeric powder. Mix this well.
  • Now store it in an airtight container. Use as & when needed.
  • I will soon share the recipe of making thalipeeth from this flour.

Tips:
  • Just increase the quantity of the flours & store it in an airtight container. Make this flour in bulk quantity.

Ragi Ladoo

 
            Very few people know about the health benefits of Ragi flour. Its one of the healthy food item. Its loaded with calcium. & yes those who want to reduce weight, Ragi is a good option for them. Today I am sharing with you all a recipe using Ragi flour. Its best for kids. Due to its color, they will feel as if they are eating chocolates. ;-)

            So what are you waiting for, lets get started.



Ingredients:
  • Ragi Flour 1 cup
  • Sugar powder 1/3 cup
  • Cardamom powder 1/5 tsp
  • Ghee 3 & 1/2 tbsp.
  • Dry fruits like almonds, pistachios & cashews ground coarsely - 2 tbsp.

Method:
  • Heat a non stick pan.
  • Add to it ghee.
  • Once the ghee melts, add to it ragi flour. Sauté it for 12 - 16 minutes on low flame or until a lovely aroma comes from the mixture.
  • Add the dry fruits mixture & cardamom powder to it. Sauté again for a minute or so.
  • Remove it in a bowl & let it cool down.
  • Once the ragi mixture cools down a bit (it should still be warm), add to it sugar powder. Mix well with your hands.
  • Now make small balls from this mixture.
  • Store it in an airtight container.
Tips:
  • Shape ladoos when the mixture is still warm. The mixture shouldn't cool down completely.
  • You can also add raisins if you like. I personally don't like them. So not added.
  • Adjust the quantity of sugar according to the sweetness you desire.

Masala Baked Doi



                 As the name suggests, this is not a spicy baked doi. It just contains some Milk masala i.e. cardamom powder, saffron & dry fruits. Its so tasty, I cant describe it. You must make it now to taste this heavenly dessert.

Preparation Time: 10 minutes
Baking Time: 10 - 12 minutes

Ingredients:
  • Condensed Milk 1 cup
  • Yoghurt 2 cups
  • Fresh Cream 3/4 cup or Milk 2 tbsp
  • Cardamom Powder 1/2 tsp
  • Almonds - Cashews - Pistachios Crushed 3 tbsp.
  • Saffron few strands for garnishing

 
Method:
  • Preheat oven to 180 degree Celsius.
  • Mix condensed milk, yoghurt, cream, cardamom powder & crushed dry fruits in a mixing bowl till there are no lumps left.
  • Pour this mixture in small bowls or glasses (oven proof).
  • Garnish it with few saffron strands.
  • Place this bowls in a oven tray. Fill the oven tray with some water.
  • Place this water filled tray of bowls in the preheated oven. Bake for around 10 - 12 minutes.
  • Remove them & refrigerate for at least 2 hours.  
  • Serve Chilled !!

Flavorful Vegetable Pulao



               Sometimes we have a little bit of various veggies. But how about transforming them into a simple flavorful veg pulao. This is my take on veg pulao. Actually its my hubby's idea to make pulao from veg stock. I gave it a try. & Wow, it was just so tasty. The rice was full of flavors. One should definitely try it.



Ingredients:
  • Rice 2 cups soaked in water
  • Potato 1 medium - peeled & diced
  • Cauliflower - cut into small florets 1/4 cup
  • French beans - cut into inch size pieces 1/4 cup
  • Peas - 1/3 cup
  • Carrots - slit & cut into inch size pieces 1/4 cup
  • Onion 1 large - sliced
  • Ginger garlic paste 1 tbsp 
  • Salt to taste
  • Turmeric 1/3 tsp
  • Red Chili powder 1/4 tsp
  • Green Chilies 4 - Slit
  • Mustard Seeds 1/3 tsp
  • Cumin seeds 1/2 tsp
  • Curry leaves few
  • Ghee 1 tsp
  • Oil
  • Bayleaf
  • Cinnamon stick 1 inch



Method:
  • Boil 3 cups of water in a vessel. When the water starts boiling, add to it salt to taste, diced potato, cauliflower florets, cut French beans, peas, cut carrots & slit green chilies. Add ghee to it. Boil it for 7 - 8 mins. The vegetables will be almost cooked. Now drain the vegetables. Reserve the vegetable stock for cooking rice.
  • Cook the soaked & drained rice with the vegetable stock. Add to it salt to taste.
  • In a  nonstick pan, heat oil. Add to it mustard seeds. when they crackle, add cumin seeds, bayleaf, cinnamon stick, sliced onions, turmeric powder, ginger garlic paste & curry leaves. Saute for 2 - 3 minutes. We don't want the onions to be cooked fully. We need a little bit crunch in the veggies. Add red chili powder & the boiled veggies to it. Saute for a minute.
  • Add the cooked rice to it. Stir well. Cover with a lid & cook on low flame for 7 - 8 minutes. This helps in mixing the flavors of veggies & rice with each other & also if the veggies & rice needs cooking, it will be done.
  • Once done, don't open the lid immediately. let the pulao rest for 10 minutes.
  • Garnish with pomegranate seeds or roasted cashewnuts. Serve with pickle or papad or raita.

Oven Poached Salmon



            Fishes are super duper healthy. One should have it more often. They are loaded with essential nutrients. Fishes are world's best source of omega 3 fatty acids which are essential for human body & brain. Salmon is one of the healthy food item. It is a great source of proteins, as said before omega 3, vitamins like vitamin D, vitamin A & some members of vitamin B and also minerals like selenium, zinc, phosphorus, calcium & iron. Anyways enough of health benefits of salmon. This is not a website to provide health benefits of a food item, but recipe providing website. So I will stick to that.

             So till now you might have understood, I will be sharing a recipe for salmon today. Salmon itself is so healthy. But I will be also sharing a healthy way of making it. Oven poached technique for salmon. its very tasty. So we are not going to spoil its taste by adding any spices to it. Just some seasoning to it and we are done.

              Lets see how to make it.




Ingredients:
  • Salmon fillet along with its skin to one side 200 gm
  • Salt to taste
  • Thin Lemon slices 3
  • Garlic Clove 1 - sliced thinly
  • Oregano 1 tsp
  • Black pepper Crushed 1/3 tsp
  • Aluminium Foil
  • Olive oil 1 tsp



Method:
  • Preheat oven to 200 degree C.
  • Wash the salmon fillet.
  • Take a 30 x 30 cm aluminium foil piece.
  • Place the salmon fillet on the aluminium foil with its skin at the bottom side.
  • Sprinkle salt to taste, crushed black pepper & oregano evenly over the salmon fillet.
  • Place thin slices of garlic over it covering almost all the top of the salmon. Place the garlic slices 1 cm apart from each other. 
  • Place lemon slices side by side over the garlic pieces.
  • Drizzle some olive oil over it.
  • Now just wrap the salmon in the aluminium foil like a bag creating some space in the foil bag for the steam. That steam will help salmon cook evenly.
  • Cook it in the oven for 25 minutes.
  • Remove from oven. Let it rest for 2 - 3 minutes.
  • Serve hot !!
Tips:
  • Don't discard the juice created in the aluminium foil. Enjoy it with the salmon. Its super tasty.
  • This is the best recipe to enjoy salmon.
  • Don't eat the skin of the salmon.
  • Don't cover the salmon in aluminium foil tightly. Leave some space above it while packing just like bag.
