I have got a lot of requests for Butter Chicken recipe. So here is the recipe for Butter Chicken. This is my husband's recipe for Butter Chicken. He makes it when we have friends for lunch/dinner at our place. It is also very popular among our friends. They just love it. In fact we have converted some of our vegetarian friends into non vegetarians with this recipe. The look of the curry is just non resistible for them.

Preparation Time: 10 minutes
Cooking Time: 30 - 40 minutes
Ingredients:
- 400 gms Chicken breasts
- 2 tbsp butter
- 2 tbsp thick fresh cream
- 1 cup milk
- 10 cashews soaked overnight
- 10 - 12 cherry tomatoes (if you dont have cherry tomatoes use 2 large normal tomatoes)
- 1 tsp Garam Masala Powder
- 2 tsp Red chilli powder
- 2-3 Bay leaves
- 1 inch cinnamon stick
- 2 tsp Ginger garlic paste
- 2 green chilies(increase green chilies if you like more spicy)
- Salt to taste
Method:
- Clean and cut the Chicken into pieces.
- Grind tomatoes, soaked cashews & green chilies. Set aside.
- Heat butter in a vessel.
- Add bay leaves, cinnamon stick & ginger - garlic paste. Sauté for a minute.
- Add tomato-cashew-green chili puree, salt to taste, red chili powder & garam masala. Cook till oil separates from the paste.
- Add milk & make a thick gravy and bring it to boil.
- Reduce the heat and add chicken pieces. Stir gently to mix chicken pieces with the gravy.
- Add half of the cream and simmer for around 10 - 15 minutes.until chicken is done and gravy is thick.
- Serve hot garnished with coriander leaves and rest of the cream. It goes well with Tandoori roti or naan or rice !!
- You can replace butter with combination of butter & oil or just oil. But since the name is only butter chicken "Butter" is a must in it. Tastes awesome.
- Reduce spice level according to your taste.
- You can adjust the thickness of the gravy according to your preference.
