Tandoori Aloo


                 Tandoori Aloo is a perfect party starter for vegetarians. It is made using baby potatoes. You can definitely use normal potatoes also. Marinate them & bake them. Check the recipe below..




Ingredients:
  • Baby Potatoes (10 - 12)
  • Curd 1 cup
  • Red Chili Powder 1 tsp
  • Garam Masala 1/2 tsp
  • Ginger - Garlic Paste 1 tsp
  • Turmeric 1/3 tsp
  • Salt to taste
  • Oil



Method:
  • Boil baby potatoes for 7 - 8 minutes.
  • Peel the skin from the potatoes.
  • Make the marinade by mixing red chili powder, garam masala, ginger garlic paste, turmeric powder, salt to taste, 1 tsp oil & curd in a bowl. Mix well.
  • Dip all the peeled baby potatoes in the marinade. Leave it aside for 2 hours.
  • Preheat oven to 200 degree C.
  • Place the baby potatoes in the oven for 30 - 40 minutes. Flip each potato after 20 minutes.
  • Remove them once they turn golden from all sides.
  • Serve hot with some salad & chutney of your choice.
Tips:
  • If you don't have oven, don't worry. You can also make it on a tawa.

Wheat Flour Chakli


               Chakli is one of the very famous snacks from India. It is generally made during Diwali festival. But you can have it anytime at teatime. I have made it using Wheat flour. Check the recipe below....



Ingredients:
  • Wheat Flour 1 cup
  • Salt to taste
  • Oil
  • Bedekar Bhajni Masala
  • Water




Method:
  • Put wheat flour in a steamer vessel. Cover the vessel with a cloth.
  • Steam it for 20 minutes. Remove the vessel from the steamer.
  • Now the wheat flour will have turned quite hard. So use a fork to separate the wheat flour.
  • Sieve it though a strainer so that there no lumps left.
  • Add salt to taste & bedekar bhajni masala (2 - 3 tsp) to the steamed wheat flour.

  • Knead it into a stiff dough by adding water little by little.
  • Cover the dough & set aside.
  • Now take the chakli maker (use star attachment).
  • Take small portion from the dough & form a cylindrical shape out of it.
  • Now form circular chaklis using chakli maker. Seal the edges.
  • Fry them in hot oil on low to medium heat.
  • Once they turn golden color & crisp, remove them on kitchen napkins.
  • Once they cool down store them in airtight container.


Tips:
  • While forming chaklis use a newspaper or baking paper.
  • You can use any readymade chakli masala.
  • If you don't have readymade chakli masala, then instead use turmeric powder, red chili powder, coriander powder & sesame seeds.

Disco Egg Fry


             Disco Egg Fry is one of the famous street food from India. It is superrr delicious. Its made in a jiffy. You can have it for breakfast or lunch or dinner.

             Below is the recipe with step by step picture illustration.



Preparation Time: 5 minutes
Cooking Time: 5 minutes


Ingredients:
  • Pavs 2 
  • Eggs 2 
  • Oil 1 tbsp.
  • Salt to taste
  • Chaat masala to taste
  • Red Chili Powder 1 tsp
  • Turmeric Powder 1/3 tsp
  • Green Chili 1 - finely chopped
  • Onion half - finely chopped
  • Coriander leaves finely chopped

Method:
  • Heat oil on a skillet.
  • Spread half of the finely chopped green chilies, half of finely chopped coriander leaves, half of finely chopped coriander leaves, turmeric powder & red chili powder on the skillet.
  • Break 2 eggs on it. Try to spread it on the skillet with the help of a spatula.
  • Sprinkle salt & chaat masala on it as per your taste. (Chaat Masala more compared to salt).
  • Place the 2 open pavs on the eggs next to each other. (inside of pavs facing the eggs)
  • Spread some oil over it. Also spread remaining finely chopped onions, remaining finely chopped green chilies, remaining coriander leaves, chaat masala, red chili powder, & salt om top of the pavs.
  • Press the top of pavs with the help of a potato masher.
  • Now flip it with a spatula. Press it again with the help of a potato masher. Flip it again.
  • Remove it on a serving plate.
Tips:
  • Divide each of the ingredients in 2 parts. One portion of each ingredient on the omlette & other portion over the top of pav. (See images below)
  • You have to be very quick in spreading the ingredients. So keep all ingredients ready beforehand.
  • Try to spread the ingredients on the skillet so that all ingredients are equally distributed. And also it makes the final product look appealing to the eyes. (Check images below)
  • Keep the heat on medium for the whole recipe
 Step by Step Picture Illustration:



Heat oil in a skillet. Spread it with a spatula so that your omlette doesn't
 stick to the skillet. Spread finely chopped onion, green chilies
 & coriander leaves on the skillet.
Try to spread the ingredients as shown in the image..
Don't do anything to it.



Similarly spread turmeric, little red chili powder over the skillet.



Add 2 eggs over it.



Spread the eggs with a spatula. Sprinkle salt over it.



Open 2 pavs  & place it on the omlette
 (Inside of pav facing the omlette as shown in the pic)



Sprinkle some oil, onions, coriander leaves, salt, red chili powder & green chilis
on the top of the pav as shown in the pic. Press it with a spatula.



Flip it with the spatula & press again. Once done, remove it on a serving plate.
Serve Hot !!!

Upma



                  Upma is a healthy breakfast. Its very easy to make. Check the recipe below...





Ingredients:
  • Coarse Semolina 1 cup
  • Water 2.5 cups
  • Onion 1 small finely chopped
  • Green Chili 2 chopped in pieces
  • Urad Dal 1 tsp
  • Curry Leaves
  • Coriander leaves
  • Nylon Sev
  • Salt to taste
  • Oil
  • Ginger 1 cm piece finely chopped
  • Mustard seeds 1/2 tsp
  • Asafetida a pinch
  • A lemon wedge
  • Freshly scraped coconut (optional)



Method:
  • Heat oil in a pan.
  • Add mustard seeds. When they crackle, add chopped green chili, finely chopped ginger, asafetida, coriander leaves, curry leaves & urad dal.
  • When urad dal turns golden, add finely chopped onions.
  • When onions turn translucent, add semolina. 
  • Roast semolina until semolina turns golden.
  • Add water & salt to taste.
  • Cook until all the water is absorbed by semolina.
  • Serve hot.
  • Garnish with coriander leaves, nylon sev, freshly scraped coconut(optional) & a small drizzle of lemon juice.



Tips:
  • Prepare this upma on medium heat.
  • Use coarse variety of semolina.

Carrot Halwa


      I know carrot halwa is a very simple dish. Everyone knows how to cook it. But there are still some people who dont know its recipe mayb theones who just started cooking. So this one is for them. Try this my style of making gajar halwa.



Ingredients:
  • Grated Carrots - 2 cups
  • Milk - 2 cup
  • Sugar - 1 cup
  • 1 tsp Cardamom Powder
  • Almonds & Pistachios for garnishing
  • 2 tsp ghee



Method:
  • Wash, peel & grate the carrots.
  • In a heavy bottomed non stick pan, boil Milk on a medium flame till it is reduced to half.
  • Heat ghee in another pan
  • Add grated carrots to it.
  • Cook the carrots on medium flame for 5 mins.
  • Add sugar & let it cook on medium flame till the sugar melts & carrots become soft.
  • Add the reduced milk to the pan of carrots. Keep cooking till the carrots mixture thickens.
  • Add cardamom powder to it.
  • Cook it until all the moisture evaporates from the mixture.
  • Garnish with chopped dry fruits of your choice.
Tips:
  • Keep stirring while making carrot halwa.
