Murg Malai Tikka

`             
                  I love all types of murg kebab. This murg malai kebab too is one of my favorite. Here I am sharing my style of murg malai kebab recipe. Please try it for yourself & enjoy.


Ingredients:
  • Boneless Chicken 500 gms
  • Cheese 1/4 cup
  • Cream cheese 100 gms
  • Greek Curd (Yoghurt) 2 tbsp.
  • Salt to taste
  • Green Chilies 2 finely chopped
  • Freshly Ground Black Pepper 1 tsp
  • Coriander leaves 1 tsp finely chopped
  • Lemon Juice 1 tsp
  • Ginger garlic paste 1 tbsp.
  • Butter

 
Method:
  • Cut chicken in big bite size pieces.
  • Marination 1 - Apply salt to taste, lemon juice & ginger garlic paste to the chicken pieces.
  • Marination 2 - Now take cheese in a plate. with the help of your fingers, scrub it well until a nice paste is formed. Mix cream cheese & yoghurt with it. Also add a pinch of salt, finely chopped green chilies, freshly ground black pepper & finely chopped coriander leaves to it. Apply this cheese mixture to the chicken pieces.
  • Leave it for 4 - 5 hours.
  • Preheat oven to 200 degree Celcius.
  • Insert the chicken pieces in skewers.
  • Place this chicken skewers on a oven tray. Place this tray in oven.
  • Bake it for around 20 - 25 minutes. Give it a flip after 10 minutes & apply butter.
  • Once done wrap the chicken pieces in a aluminium foil. Sprinkle some chaat masala over it. Keep it in aluminium foil for atleast 2 minutes.
  • Serve hot with some salad & curd chutney.

Pani Puri Khakra


                Who doesn't love pani puri ? ^_^ I am a fan of it. I wanted to give it a twist. I wanted the pani puri flavor in something healthy. & an idea struck me. I decided to give our gujarati khakras a taste of pani puri. I thought of giving it a try. & Mission Successful !! Khakras are healthy & my craving for pani puri is also satisfied. ;-)

                   Below is my recipe for the same. Do try it for yourselves too. :-)

Ingredients:
  • Wheat Flour - 1 cup
  • Gram Flour - 1 tbsp.
  • Black Salt - 1 & 1/2 tsp
  • Aamchur Powder - 1 tbsp.
  • Pani puri Masala - 1 tbsp.
  • Sugar Powder - 1 tbsp.
  • Ginger - 1 cm piece
  • Mint leaves - few (around 20 - 25)
  • Coriander leaves - Double the quantity of mint leaves
  • Water as needed



Method:
  • Grind mint leaves, coriander leaves, green chilies, ginger, black salt, aamchur powder, pani puri masala & sugar powder to a fine paste. Add 1 or 2 tbsp. water just to help grinding.
  • Take wheat flour & gram flour in a mixing bowl. Add to it the ground paste. Mix well. Knead to form a dough. Use water as needed.
  • Leave the dough to rest for 30 minutes.
  • Now divide the dough in equal sized small flat round balls.
  • Roll each dough ball into very thin rotis. Use a circle shaped cutter for a nice round shape. Dust some dry flour to make the thin rotis. Make the rotis as thin as possible.
  • Roast each roti on a skillet on medium flame. Press the roti with a potato masher from both sides. The roti should not puff up. If it does, just break the bubble with a fork. Roast it until the roti has some nice brown spots on both sides & crisp.
  • Repeat the above 2 steps for each dough ball.
  • Khakras are ready.
  • Once khakras cool down, store it in a airtight container.


Tips:
  • Adjust the spices according to your taste.
  • Its important to roast the khakras on medium flame to make them crisp.
  • Press the khakras while roasting. they should not puff up. If they do, pierce the bubbles with a fork.

Hara Bhara Kebab



                         As the name suggests, Hara Bhara Kebab is a potato cutlet loaded with lots of green veggies. These green veggies can be of your choice. Green Veggies are really good for your health. So this is a really good option. I have shared my version of hara bhara kebab recipe below. Try it out !!





Ingredients:
  • Potatoes 2 medium - Boiled, Peeled & mashed
  • Spinach Leaves 2 cups
  • Peas 1 cup - Boiled & mashed
  • Green Chili - Ginger Crush 2 tbsp.
  • Salt to taste
  • Roasted Cumin seeds powder 1 tsp
  • Garam Masala 1 tsp
  • Lots of Coriander leaves chopped finely
  • Mint leaves few finely chopped
  • Paneer grated 1/3 cup
  • Oil
  • Roasted peanut powder 1/4 cup
  • Semolina / Bread crumbs.

Method:
  • Put washed spinach leaves in boiling water for 4 minutes. Then remove them in ice water. After a couple of minutes, remove the spinach leaves & squeeze them to remove all the water. Place them on a napkin to remove any moisture from it. Later chop them finely.
  • In a mixing bowl, place all the other ingredients - mashed potatoes, grated paneer, mashed peas, chopped spinach leaves, green chili - ginger crush, coriander leaves, mint leaves, roasted peanut powder, salt to taste, roasted cumin seeds powder and garam masala. Mix everything properly.
  • Make small round balls from the mixture. Flatten them a bit to form a patties shape. Dust each patty in semolina or bread crumbs.
  • Now heat a skillet & drizzle some oil over it. Roast each patty in it until browned from both sides. You can also deep fry them if you wish.


Tips:
  • You can definitely deep fry the cutlets if you wish to. But I like it this healthy way. :)
  • Use semolina or bread crumbs for coating the cutlets before frying.

Falafel Waffles


            Falafel is a traditional middle - eastern snack. It is a deep fried patty made from ground chickpeas. It tastes great just like that. It is generally served in pita loaded with veggies & sauces. Today I am showing you the same falafels but made differently. Instead of frying I am just cooking it in waffle iron. Sounds interesting, isn't it ?
           
             Check the recipe below. Just give it a try. You can serve it in tiffin's as well. So a healthy option for your kids tiffin. :)



Ingredients:

For Falafel Waffles:
  • Chickpeas 1 cup
  • Garlic Cloves 3 medium
  • Coriander leaves
  • Parsley
  • Green Chilies 3 or 4
  • Cumin seeds powder 1 tsp
  • Coriander seeds powder 2 tsp
  • Salt to taste
  • Black Pepper (almost 1 tsp)
  • Oil
  • Lemon Juice 2 tsp
  • Baking Powder 1/2 tsp
  • Onion finely chopped 1/4 cup
For Yoghurt Sauce:
  • Yoghurt 1 cup
  • Lemon juice 1 tsp
  • Salt to taste
  • Freshly ground black pepper 1 tsp
  • Mint leaves few chopped finely


Method:

For falafel Waffles:


  • Soak chickpeas for 6 - 8 hours in enough water.
  • After 6 - 8 hours, the chickpeas will have doubled in size. Now drain off all the water from it.
  • Now grind it to a coarse paste along with garlic cloves, green chilies, coriander leaves & parsley.
  • Remove it in a bowl. Season the mixture with salt, cumin seeds powder, coriander seeds powder, crushed black pepper, black pepper, finely chopped onion, lemon juice & baking powder. Mix well.
  • Preheat the waffle iron.
  • Pour a ladleful of waffle batter in the waffle iron.
  • Close it. Let it cook for 10 - 12 minutes.
Yoghurt sauce:



  • Mix all ingredients for sauce - yoghurt, salt, black pepper, lemon juice & mint leaves.  Mix well. Add water if necessary to make sauce like consistency.
Tips:
  • Add baking powder just before making the waffles.
  • If you want it to be brown, cook it for little more time in waffle iron.
  • If you don't have waffle iron make in the sandwich maker. It will be the same with a different shape.

Aloo - Mutter Cutlets (Potatoes - Peas Cutlets)



                         Hello Hello Everyone. Its been a while since I posted any recipe. I was busy with some other stuff. But here I am back with another recipe.

                        Today I bring another variety of cutlets. Aloo Mutter Cutlets. They are made using very basic ingredients Potatoes & Peas which are readily available at home. These cutlets can be a quick snack or a party starter or even used for tiffins. You can use these cutlets for burger as well. Check out the recipe for cutlets below. Hope you like it.
 




Ingredients:
  • Potatoes 4 - Boiled, Peeled & Mashed
  • Peas 2/3 cup - Boiled & Mashed
  • Salt to taste
  • Green Chilies 5 - 6 finely Chopped
  • Ginger grated 1/2 tsp
  • Cumin seed powder 1/3 tsp
  • Red Chili Powder 1/4 tsp
  • Turmeric Powder 1/3 tsp
  • Garam Masala 1/2 tsp
  • Coriander Leaves Finely Chopped 
  • Oil
  • Semolina
Method:
  • Mix mashed potatoes, mashed peas, salt, finely chopped green chilies, grated ginger, cumin seeds powder, red chili powder, garam masala, turmeric powder & finely chopped Coriander leaves in a mixing bowl.
  • Make small balls from the mixture. Flatten it a bit.
  • Dust some semolina on each cutlet.
  • Now cook it on a tawa with some oil until golden brown from both sides.
  • Once done, remove in a serving plate.
  • Serve hot with ketchup or coriander - mint chutney.
Tips:
  • You can also use bread crumbs instead of semolina for dusting on each cutlet.
  • You can adjust spiciness of cutlets by increasing or reducing the amount of green chilies as per your taste.

Ragda Patties


          Ragda Patties is one the popular street food of Mumbai. It is so tasty. Below is my recipe for Ragda Patties. Just enjoy it when it is Hot !!! 





Preparation Time: 40 minutes
Cooking Time: 40 minutes

Ingredients:

      For Ragda:
    • White peas 1 cup
    • Boiled potato 1
    • Mustard seeds 1 tsp
    • Cumin seeds 1 tsp
    • Ginger - Garlic - Green Chilies coarsely ground 2 tsp
    • Onion 1 medium - finely chopped
    • Tomato 1 medium - finely chopped
    • Turmeric powder
    • Asafetida
    • Red Chili Powder 1 tsp
    • Coriander seeds powder 1/2 tsp
    • Garam masala 1 tsp
    • Aamchur powder 1 tsp
    • Salt to taste
    • Oil
    • Cinnamon Stick 1/2 inch
    • Bayleaf 1
     For Patties:
    • Boiled potatoes 5 - 6 large
    • Green Chilies 2 chopped finely
    • Turmeric powder 1/2 tsp
    • Salt to taste
    • Garam Masala 1 tsp
    • Red Chili Powder 1/4 tsp
    • Cumin seeds powder 1/2 tsp
    • Coriander leaves finely chopped
    • Oil
      Other Ingredients:



Method:
 
      Ragda:
    • Wash & Soak white peas in water for 6 - 8 hours.
    • Pressure cook soaked white peas along with asafetida & turmeric powder for around 5 - 6 whistles.
    • Heat 1 tbsp. oil in a pan.
    • Add mustard seeds.
    • When they crackle, add cumin seeds, cinnamon stick & Bayleaf.
    • When cumin seeds splutter, add coarsely ginger - garlic - green chili paste. Sauté it for few seconds.
    • Now add finely chopped onions. Sauté them till they turn translucent.
    • Add finely chopped tomatoes. Cook till they become soft.
    • Add red chili powder, coriander seeds powder, garam masala & aamchur powder to it. Cook till oil starts separating from it.
    • Add pressure cooked white peas to it along with its water & salt to taste.
    • Also add boiled & mashed potato to it.
    • Cook for 5 minutes on slow - medium flame.
       Patties:
    • Peel boiled potatoes. Mash them.
    • Add finely chopped green chilies, cumin seeds powder, red chili powder, garam masala, turmeric powder, salt to taste & finely chopped coriander leaves to it.
    • Mix it properly.
    • Divide them in small equal sized balls. Flatten each ball to form a patties.
    • Roast each patties on a flat tawa in very little oil till each side turns golden brown.
      Assembling Ragda Patties:
    • Take a deep bowl.
    • Add 2 - 3 roasted potato patties.
    • Pour a spoonful of ragda over it.
    • Drizzle some coriander - mint chutney to taste, red garlic chutney to taste & tamarind chutney to taste over it.
    • Sprinkle chaat masala over it.
    • Spread some finely chopped onions, sev & coriander leaves over it.
    • Serve immediately !!





Tips:
  • While roasting patties, put very little oil on a tawa. So that you get the browning on both sides & also it gets browned very quickly.
