Murg Malai Tikka

`             
                  I love all types of murg kebab. This murg malai kebab too is one of my favorite. Here I am sharing my style of murg malai kebab recipe. Please try it for yourself & enjoy.


Ingredients:
  • Boneless Chicken 500 gms
  • Cheese 1/4 cup
  • Cream cheese 100 gms
  • Greek Curd (Yoghurt) 2 tbsp.
  • Salt to taste
  • Green Chilies 2 finely chopped
  • Freshly Ground Black Pepper 1 tsp
  • Coriander leaves 1 tsp finely chopped
  • Lemon Juice 1 tsp
  • Ginger garlic paste 1 tbsp.
  • Butter

 
Method:
  • Cut chicken in big bite size pieces.
  • Marination 1 - Apply salt to taste, lemon juice & ginger garlic paste to the chicken pieces.
  • Marination 2 - Now take cheese in a plate. with the help of your fingers, scrub it well until a nice paste is formed. Mix cream cheese & yoghurt with it. Also add a pinch of salt, finely chopped green chilies, freshly ground black pepper & finely chopped coriander leaves to it. Apply this cheese mixture to the chicken pieces.
  • Leave it for 4 - 5 hours.
  • Preheat oven to 200 degree Celcius.
  • Insert the chicken pieces in skewers.
  • Place this chicken skewers on a oven tray. Place this tray in oven.
  • Bake it for around 20 - 25 minutes. Give it a flip after 10 minutes & apply butter.
  • Once done wrap the chicken pieces in a aluminium foil. Sprinkle some chaat masala over it. Keep it in aluminium foil for atleast 2 minutes.
  • Serve hot with some salad & curd chutney.

Oven Poached Salmon



            Fishes are super duper healthy. One should have it more often. They are loaded with essential nutrients. Fishes are world's best source of omega 3 fatty acids which are essential for human body & brain. Salmon is one of the healthy food item. It is a great source of proteins, as said before omega 3, vitamins like vitamin D, vitamin A & some members of vitamin B and also minerals like selenium, zinc, phosphorus, calcium & iron. Anyways enough of health benefits of salmon. This is not a website to provide health benefits of a food item, but recipe providing website. So I will stick to that.

             So till now you might have understood, I will be sharing a recipe for salmon today. Salmon itself is so healthy. But I will be also sharing a healthy way of making it. Oven poached technique for salmon. its very tasty. So we are not going to spoil its taste by adding any spices to it. Just some seasoning to it and we are done.

              Lets see how to make it.




Ingredients:
  • Salmon fillet along with its skin to one side 200 gm
  • Salt to taste
  • Thin Lemon slices 3
  • Garlic Clove 1 - sliced thinly
  • Oregano 1 tsp
  • Black pepper Crushed 1/3 tsp
  • Aluminium Foil
  • Olive oil 1 tsp



Method:
  • Preheat oven to 200 degree C.
  • Wash the salmon fillet.
  • Take a 30 x 30 cm aluminium foil piece.
  • Place the salmon fillet on the aluminium foil with its skin at the bottom side.
  • Sprinkle salt to taste, crushed black pepper & oregano evenly over the salmon fillet.
  • Place thin slices of garlic over it covering almost all the top of the salmon. Place the garlic slices 1 cm apart from each other. 
  • Place lemon slices side by side over the garlic pieces.
  • Drizzle some olive oil over it.
  • Now just wrap the salmon in the aluminium foil like a bag creating some space in the foil bag for the steam. That steam will help salmon cook evenly.
  • Cook it in the oven for 25 minutes.
  • Remove from oven. Let it rest for 2 - 3 minutes.
  • Serve hot !!
Tips:
  • Don't discard the juice created in the aluminium foil. Enjoy it with the salmon. Its super tasty.
  • This is the best recipe to enjoy salmon.
  • Don't eat the skin of the salmon.
  • Don't cover the salmon in aluminium foil tightly. Leave some space above it while packing just like bag.

Kolhapuri Chicken


                Shravan (a Month according to Hindu calendar) is starting next week. So we Maharashtrians celebrate a Gatari day just a day before. On this day we make a variety of non veg food & have it. Since for a month we wont be eating any non veg item. So on this occasion sharing a very traditional Maharashtrian dish Kolhapuri Chicken. The name itself suggests its very spicy. Serve it with bhakris. Check the recipe below.


                      



Ingredients:
  • Dry Coconut grated - 1/2 cup
  • Whole Spices
    • Coriander Seeds 2 tsp
    • Cumin Seeds 1 tsp
    • Red Chilies 7 - 8
    • Sesame seeds 1/2 tsp
    • Poppy Seeds 1/2 tsp
    • Black peppercons 7 - 8
    • Cloves 2
    • Javitri 1
    • Cinnamon Stick 1/2 inch
  • Red Chili Powder 1 tsp
  • Garam Masala 1 tsp
  • Salt to taste
  • Turmeric powder 1/2 tsp
  • Oil
  • Chicken Boneless 300 gms
  • Ginger garlic paste 1 tbsp.
  • Onion 1 finely chopped
  • Tomato 1 finely chopped


Method:
  • Dry roast grated coconut & whole spices on low flame till they turn golden brown. Grind this into fine powder without adding water.
  • Marinate chicken pieces with 1 tsp of coconut - spice powder, salt, half of the ginger garlic paste & turmeric powder.
  • Heat oil in a non stick pan.
  • Add finely chopped onions & remaining ginger garlic paste. Saute till onions turn golden brown in color.
  • Add finely chopped tomatoes to it. Also add red chili powder to it.
  • Cover cooked till oil separates from it.
  • Now add the remaining coconut - spice powder to it. Add 1 cup water to it.
  • Cook covered for 10 minutes on medium flame.
  • Add marinated chicken pieces to it. Cook for 7 - 8 minutes or until chicken is cooked.
  • Check for salt & add accordingly.
  • Sizzling Hot Kolhapuri chicken is ready.
  • Serve hot with bhakri.

Disco Egg Fry


             Disco Egg Fry is one of the famous street food from India. It is superrr delicious. Its made in a jiffy. You can have it for breakfast or lunch or dinner.

             Below is the recipe with step by step picture illustration.



Preparation Time: 5 minutes
Cooking Time: 5 minutes


Ingredients:
  • Pavs 2 
  • Eggs 2 
  • Oil 1 tbsp.
  • Salt to taste
  • Chaat masala to taste
  • Red Chili Powder 1 tsp
  • Turmeric Powder 1/3 tsp
  • Green Chili 1 - finely chopped
  • Onion half - finely chopped
  • Coriander leaves finely chopped

Method:
  • Heat oil on a skillet.
  • Spread half of the finely chopped green chilies, half of finely chopped coriander leaves, half of finely chopped coriander leaves, turmeric powder & red chili powder on the skillet.
  • Break 2 eggs on it. Try to spread it on the skillet with the help of a spatula.
  • Sprinkle salt & chaat masala on it as per your taste. (Chaat Masala more compared to salt).
  • Place the 2 open pavs on the eggs next to each other. (inside of pavs facing the eggs)
  • Spread some oil over it. Also spread remaining finely chopped onions, remaining finely chopped green chilies, remaining coriander leaves, chaat masala, red chili powder, & salt om top of the pavs.
  • Press the top of pavs with the help of a potato masher.
  • Now flip it with a spatula. Press it again with the help of a potato masher. Flip it again.
  • Remove it on a serving plate.
Tips:
  • Divide each of the ingredients in 2 parts. One portion of each ingredient on the omlette & other portion over the top of pav. (See images below)
  • You have to be very quick in spreading the ingredients. So keep all ingredients ready beforehand.
  • Try to spread the ingredients on the skillet so that all ingredients are equally distributed. And also it makes the final product look appealing to the eyes. (Check images below)
  • Keep the heat on medium for the whole recipe
 Step by Step Picture Illustration:



Heat oil in a skillet. Spread it with a spatula so that your omlette doesn't
 stick to the skillet. Spread finely chopped onion, green chilies
 & coriander leaves on the skillet.
Try to spread the ingredients as shown in the image..
Don't do anything to it.



Similarly spread turmeric, little red chili powder over the skillet.



Add 2 eggs over it.



Spread the eggs with a spatula. Sprinkle salt over it.



Open 2 pavs  & place it on the omlette
 (Inside of pav facing the omlette as shown in the pic)



Sprinkle some oil, onions, coriander leaves, salt, red chili powder & green chilis
on the top of the pav as shown in the pic. Press it with a spatula.



Flip it with the spatula & press again. Once done, remove it on a serving plate.
Serve Hot !!!

Kali Mirch Murgh Kebab

               I once had this kebabs in a Restaurant while in India. It was so delicious. I loved it a lot. When I was back from India, I always missed this tikkas. So I thought of making it myself. After a lot of attempts, I finally managed to make it just like those in that restaurant. If you haven't tried it yet, you should definitely try it once. Its simple.

                Below is the recipe for the same.





Ingredients:
  • Chicken Breast 200 gms
  • Green Chili 1 small
  • Ginger 1/3 inch piece
  • Garlic Cloves 2 medium
  • Fresh Black peppercorns crushed 1/2 tsp
  • Thick Curd / Yoghurt 1/2 cup
  • Salt to taste
  • Chaat Masala
  • Lemon juice 1/2 tsp
  • Butter melted



Method:
  • Grind green chili, ginger & garlic without adding water. It will be ground coarsely.
  • Cut chicken breasts into 2 inch big pieces.
  • Rub salt & lemon juice to the chicken pieces. Keep for 10 minutes
  • Add ginger - garlic - green chili coarsely ground paste & crushed black pepper powder to the chicken pieces. Keep this for 10 minutes.
  • Later apply yoghurt to the chicken pieces. Now keep this for at least 1 hour.
  • Preheat oven to 200 degree Celsius.
  • Insert this chicken pieces into skewers.
  • Place the skewers on the grill plate in the preheated oven.
  • Flip them after 7 minutes. Brush melted butter to the chicken pieces.
  • Again after 7 minutes flip them & brush melted butter to the chicken pieces.
  • Again flip after 7 minutes & brush them with melted butter. (Total the chicken breasts are in oven for 21 minutes. Flip after every 7 minutes. If you feel chicken is not cooked properly keep them in the oven for max 25 minutes not more than that).
  • Once done remove them in aluminum foil. Sprinkle some chaat masala & a pinch of coarsely ground black pepper powder. Cover the pieces in the aluminum foil.
  • Let it rest for 5 minutes.
  • Serve immediately with curd dip or coriander - mint chutney.
Tips:
  • Marinate the chicken for at least 1 hour.
  • Place the chicken skewers in the oven for max 25 minutes so that the pieces remain soft & tender. Not more than that or else the chicken will become dry & hard. Boneless chicken doesn't take long time to cook.
  • Check out the curd dip recipe which goes well with the kebabs.

Simple & Quick Chicken Curry


        
               We are so busy in our daily lives. We love delicious food but we dont have long hours to spend in cooking. So here is a quick, simple & delicious chicken curry. Not much efforts needed in cooking it. Here is the recipe.


Ingredients:
  • Chicken 300 gms chopped
  • 1 big onion
  • 1 big Tomato
  • Curd 1 cup
  • Salt to taste
  • Ginger Garlic Paste 1 tbsp.
  • Red Chili Powder 2 tsp
  • Garam Masala 1 tsp
  • Green Chili 1 chopped finely
  • few mint leaves
  • few coriander leaves
  • Oil 1 tbsp.
Method:
  • In a small bowl, mix curd, ginger garlic paste, red chili powder, garam masala, chopped green chili, salt to taste, chopped mint leaves & chopped coriander leaves.
  • Marinate chicken with the curd mixture.
  • Grind together onion & tomato.
  • Heat oil in a non stick pan.
  • Add onion - tomato puree to the oil. Cover with a lid & cook for 10 minutes on medium heat. Stir frequently.
  • Add marinated chicken pieces to the cooked onion tomato mixture in the pan. Stir well.
  • Cover with a lid & let it cook for 15 minutes or until chicken is cooked.
  • Garnish with coriander leaves.
  • Serve hot with chapatti or rice or pav.
Tips:
  • Marinate chicken from 15 minutes to 1 hour whatever is possible for you.
  • If you feel the need to add water while cooking onion tomato puree, do add just 1 tbsp. Don't add much water.
  • You can use chicken drumsticks as well but the time will vary then.
