Baked Doi (Gulkand Flavored)


              The day I had Gulkand ice-cream, I have become a big fan of Gulkand flavor. & I have also made my hubby crazy for Gulkand flavor. We both love desserts. So I just try to incorporate gulkand flavor in almost all my desserts. One such experiment I tried was adding this gulkand flavor in my baked doi dessert. Ooooooohhh !!! It was so delicious. I made this experiment when I had called some of my friends over dinner. They all just loved it.
 
              So today sharing with you my new dish - Baked Doi (Gulkand flavored) !!! I hope to get the same response as my Gulkand ice-cream dish got !! Waiting for your wonderful comments !!




Preparation Time: 10 minutes
Baking Time: 10 - 12 minutes

Ingredients:
  • Condensed Milk 1 cup
  • Yoghurt 2 cups
  • Thick Fresh Cream 3/4 cup
  • Gulkand 2 tbsp.
  • Rose syrup 1 tbsp
  • Raspberry for garnishing


Method:
  • Preheat oven to 180 degree Celsius.
  • Mix condensed milk, yoghurt, cream, gulkand & rose syrup in a mixing bowl till there are no lumps left.
  • Pour this mixture in small bowls or glasses (oven proof).
  • Place this bowls in a oven tray. Fill the oven tray with some water.
  • Place this water filled tray of bowls in the preheated oven. Bake for around 10 - 12 minutes.
  • Remove them & refrigerate for at least 2 hours.
  • Garnish with raspberries.
  • Serve Chilled !!

Lamb Curry


             Hello everyone !! After a long time, sharing a non-veg recipe on my blog !! I am not a fan of lamb/mutton curry. I don't like it that much. I generally eat chicken curry. But my husband loves lamb/mutton more than chicken curry. So just for him I made this delicious spicy lamb curry. He guided me a lot in making it as I have never prepared it. & Voila !!! The outcome was super delicious. The aroma of the curry forced me to taste it. & oh my god !!! It was so tasty. I just couldn't control myself from eating it.

             Please do try it !!! The recipe is simple & also less time consuming.



Preparation Time: 20 minutes
Cooking Time: 60 minutes

Ingredients:
  • Lamb pieces 300 gms
  • Whole Spices - 1 bayleaf, 4 black peppercons, 2 cloves, 1/2 tsp shahi cumin seeds, 1 tsp fennel seeds, 1 tsp poppy seeds, 1 cardamom.
  • 2 onions
  • 1 tomato
  • Dry grated coconut 1/2 cup
  • Red Chili Powder
  • Garam Masala
  • Mutton Masala
  • Turmeric powder
  • Asafetida
  • Oil
  • Water
  • Salt to taste
  • Ginger garlic paste
  • Coriander leaves

Method:
  • Marinate Lamb - Marinate lamb pieces with salt to taste, 1 tsp red chili powder, 1 tsp mutton masala & 1 tsp ginger garlic paste. Keep aside for an hour.
  • Cook lamb in pressure cooker - Heat oil in pressure cooker. To this add 1 medium onion finely chopped, asafetida & turmeric powder. Sauté. Add marinated lamb pieces. Mix well. Add 2 cups water to lamb. Cook for around 6 - 7 whistles.
  • Ground masala paste - Heat oil again in a separate pan. Add to it bayleaf, black peppercons, cloves, shahi cumin seeds, fennel seeds, poppy seeds & cardamom. Saute for a minute. Now add roughly chopped onion, 1 tsp ginger garlic paste. Cook till onion turns translucent. Add 1/2 cup dry grated coconut. Cook till coconut turns brown. Let the mixture cool. Later grind it to a smooth paste along with 1 tomato & coriander leaves. Keep aside.
  • Make Lamb Curry - Heat oil in the same pan. Add ground masala paste, 1 tbsp mutton masala & 1 tsp red chili powder. Cook on low flame for 10 - 12 minutes till oil separates from the gravy. Now add cooked lamb pieces along with water. Stir well. Check for salt & add it accordingly. Also add 1 tsp garam masala. Stir well. Cook on low flame for 10 minutes.
  • Garnish with coriander leaves.
  • Serve hot with bhakri or steamed rice or pav !!

Healthy Red Veg Cutlet


                  Veg Cutlets is a very common starter dish for parties. There are various versions of veg cutlet recipes available. But below is my version. Its nice bright red colored cutlets. They look so appealing to the eyes due to its red color. They are very tasty & Healthy at the same time !!! Just try it for your party & get appreciation from the guests. You can make it ahead of time for the party. Just warm it before serving !!
 
                  I have already shared a curd dip recipe. Make it along with these cutlets. The dip is just perfect with these cutlets. Try it !!!
     



Preparation Time: 15 minutes
Cooking Time: 30 minutes


Ingredients:
  • Boiled Potatoes - 3 medium (peeled & mashed)
  • Beetroot - 1/2 cup grated
  • Carrot - 1/3 cup grated 
  • French beans - 1/3 cup chopped finely
  • Corn - 3 tbsp 
  • Peas - 3 tbsp
  • Ginger Green Chilli -1/2 tsp crushed
  • Coriander leaves chopped finely
  • Red chili powder - 1/3 tsp  
  • Garam masala - 1/2 tsp
  • Cumin Seeds Powder - 1/3 tsp
  • Roasted Peanut Powder - 1 & 1/2 tbsp.
  • Salt to taste
  • Corn flour - 1 tbsp.
  • Oil
  • Semolina - 2 tbsp
  • Chaat masala


Method:
  • Microwave grated carrots, grated beetroot, chopped French beans, corn & peas each separately for 40 - 45 seconds.
  • Heat 1 tbsp. oil in a pan.
  • Add ginger chili crushed. Sauté for 30 - 40 seconds.
  • Add finely chopped French beans to it. Sauté for a minute.
  • Now add grated beetroot & grated carrot. Sauté for another minute.
  • Add corn, green peas, red chili powder, garam masala, 1 tbsp. chaat masala, cumin seeds powder & roasted peanut powder. Stir well. Sauté for 2 - 3 minutes. If the veggies are uncooked cook more for another minute or so.
  • Remove this mixture in a plate.
  • To this add  mashed potatoes & 1 tbsp. corn flour. Mix well. Check for salt. (Havn't added any salt except chaat masala but chaat masala contains salt. So add salt accordingly).
  • Now make small balls from this mixture & flatten them in your palms to give it a tikki like shape. Dust each tikki in semolina. Set aside. Do this with the rest of the mixture.
  • Now heat a flat pan. Add 1 tbsp. oil in it. Roast each tikki/cutlet in this pan till golden from both sides.
Tips:
  • You can use aamchur powder instead of chaat masala.
  • Before shaping into cutlets, do check for seasoning.
  • Chaat Masala contains salt. So don't add too much salt if using chaat masala.
  • Use any veggies of your choice.
  • You can give any shape to the tikkis/cutlet.

Watermelon Pomegranate Salad



                   I got many requests to post some salad recipe... I have already posted a healthy beetroot Sev puri before. Today is my 1st recipe for salad - Watermelon Pomegranate Salad. Its nice bright red color. Watermelon & Pomegranate are loaded with an array of nutrients, vitamins & minerals. They are good for your health.

                    There is no cooking involved in this recipe. Check it below..




Preparation Time: 10 - 15 minutes

Ingredients:
  • Watermelon pieces - Seeds removed
  • Pomegranate seeds
  • Mint leaves
  • Coriander leaves
  • Lemon Juice
  • Chaat Masala (Optional - I didn't use)


Method:
  • Try to get seedless watermelon if possible. Or if not, just remove the seeds from watermelon before adding it to salad.
  • Chop coriander leaves & mint leaves roughly.
  • In a mixing bowl, mix together watermelon pieces, pomegranate seeds, mint & coriander leaves.
  • Just while serving add lemon juice & mix.
  • Your healthy salad is ready !!
  • Serve it along with any kebabs or Tikkas !!

Cheesy Garlic Bread with a twist


             I am sure everyone is a fan of garlic bread. But have you ever tried this type of garlic bread ? If you try this style of garlic bread, you will definitely forget the regular garlic bread. & you wont believe but it is not at all difficult.

            Just make this for your dinner or kitty parties. It will be like a centre piece for your dining table. Everyone will just go "wow" over this. Kids also go crazy for it. Preparation Time: 10 minutes
Baking Time: 20 - 25 minutes


Ingredients:
  • Any big bread with crunchy crust (I used Pistolet)
  • Garlic 3 medium chopped finely
  • Butter 2 tbsp
  • Salt a pinch
  • Cheese grated
  • Oregano



Method:
  • Preheat oven to 200 degree Celsius.
  • In a microwave safe bowl, melt butter for around 30 seconds. Add to it finely chopped garlic, salt & 1 tsp dry oregano. Place in microwave again for 10 seconds. Mix.
  • Take any big bread with crunchy crust. I used pistolet.
  • Now cut the bread with a knife to get diamond shapes but don't cut the bread all the way through to the bottom. (You don't want pieces of bread, just some cuts over the bread. Refer the pictures below).
  • Now with the help of spoon, put the garlic butter in between all cuts of the bread.
  • Also put some cheese in between all cuts of the bread.
  • Now wrap it in aluminum foil. & bake for 15 minutes.
  • Unwrap it & bake again for 5 to 10 minutes until all cheese is melted.
  • Serve immediately !!



Take any bread with crispy crust




With a knife give cuts as shown but not all the way through...
just cut 2/3rd of the the bread
 


Now as shown give cuts like this to form diamond shapes..
but again same don't cut the bread all the way through...
just cut 2/3rd of the bread
 


As seen the bread is not cut fully to the bottom..




Diamond shapes will be formed as shown in the pic



Melt butter in microwave for 30 seconds..
Add finely chopped garlic, pinch of salt & dried oregano & mix. 



Fill the butter garlic mixture in the cuts of the bread.
Then fill the cuts with cheese. As shown
 
 


Wrap it in aluminium foil & bake for 15 mins in preheated oven at 200 degree C.
Unwrap it & bake for 5 to 10 minutes until cheese melts. Serve immediately !!


Tips:
  • Use preferably mozzarella cheese.
  • You can also use fresh parsley instead of dry oregano.
  • You can sprinkle some red chili flakes over the top of bread. But its optional & upto you.
  • If you are health conscious, but still want to enjoy it, skip cheese in this recipe. It still tastes amazing.
