Pav Bhaji

 
       Today, I bring you a very popular Mumbai street food "Pav Bhaji"! It is really tasty & filling.
        Lets see how to cook it. This is my Mom's recipe.  
 
 


 
Preparation Time: 30 minutes
Cooking Time: 30 minutes
Serves: 4 - 6 persons
 
Ingredients:
  • 3 large Onions
  • 2 large tomatoes
  • 2 medium potatoes
  • 1 capsicum deseeded & stem removed.
  • 1/2 cup cauliflower
  • 1/2 cup peas
  • butter
  • 3 green chilies
  • 2 tsp ginger garlic paste
  • Salt to taste
  • Pav Bhaji Masala
  • 1 tsp red chili powder
  • 1/4 tsp turmeric powder
  • Lemon
  • Coriander leaves
  • Pav
Method:
  • Pressure cook potatoes. Once cooked, peel off its skin & mash them. Keep aside.
  • Also pressure cook Cauliflower & peas along with turmeric powder with water enough for them to cook. Once cooked, mash them & keep aside.
  • Boil water in a pan. Add tomatoes & capsicum to it.
  • When you see the skin of tomato getting peeled off, remove it from boiling water. When the tomatoes are cooled, grind them with green chilies.
  • Capsicum might take a bit longer, say around 10 minutes. Feel the capsicum. If its soft, remove it from boiling water & chop the capsicum finely.
  • Chop 2 large onions finely.
  • Heat a wok. Add butter to it. Pav Bhaji is traditionally made in butter. But you can also make it in only oil or half oil & half butter.
  • Add chopped onions & ginger garlic paste to it.
  • Once onions become translucent, add chopped capsicum.
  • Cook the capsicum for 2 minutes. It wont take much time for cooking, since you have boiled it.
  • Now add the tomato & green chilies puree to it. Also add 2 tbsp pav bhaji masala & red chili powder to it. Let it boil with a lid over the wok for 5 - 10 minutes or until the masala is cooked. You will see the oil separating from the gravy. Keep stirring in between.
  • Now add the cauliflower - peas mixture & mashed potatoes to it. Add salt to it.
  • Let it boil again with the lid over the wok for 5 - 10 minutes on medium heat. Add some water to it if you the bhaji too thick & is sticking to the bottom of the pan.
  • Till the pav bhaji is cooking, chop onions & coriander leaves for garnishing. Also you can chop the lemon slices.
  • Also slit each pav. Apply butter on all sides & roast them on a hot pan from both sides.
  • Serve pav bhaji hot garnished with coriander leaves and a small dollop of butter. You can add more butter, if you like it. Along side serve finely chopped onions and lime slices. The lime juice has to be squeezed on the bhaji and topped with chopped onions. Enjoy the bhaji with the fried pav.
