Wondering what to do of the leftover idlis ?? Hmmmm... I have an idea. Why not try idli upma ? Ready in just 10 minutes & also not a hassle for preparation of the same. The ingredients are always there in our kitchen.
So lets see how its made.
Preparation Time: 5 minutes
Cooking Time: 7 - 8 minutes
Ingredients:
- 8-10 leftover Idlis diced
- small onion sliced
- half capsicum sliced
- 1 small carrot sliced
- 3 green chilies chopped
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- Curry leaves
- Asafetida
- salt to taste
- 1 tbsp Oil
- 1/2 tsp red chili powder
- chopped coriander leaves for garnishing
- Chop the ingredients in the shape you desire.
- Heat oil in a wok.
- Add mustard seeds. When they splutter, add cumin seeds, green chilies, asafetida & curry leaves.
- Add sliced capsicum (I add capsicum first since it takes more time to cook). After a minute add sliced onions & sliced carrots. Cook for 2-3 minutes. Don't cook it fully. We want the crunch of the vegetables.
- Add the red chili powder & salt to it. & cook it for 30 seconds.
- Add the diced idlis & sprinkle some water (jst 1 tbsp).
- Cover & cook on low - medium for 3-4 minutes. Stir in between to avoid sticking of the food to the bottom of the pan.
- Garnish with coriander leaves.
- You can reduce the amount of chilies. I like it spicy so I used 3 of them.
- While adding salt just remember idlis contain salt, so add salt just enough for the veggies.
- Sprinkle water since leftover idlis are dried out. If using fresh idlis skip adding water.
