Chicken Biryani - Tandoori Style



       Who doesn't love Chicken Biryani (Obviously am talking about the ones who eat chicken) ? I am a great fan of Chicken Biryani, so is my hubby. The day am cooking Chicken Biryani, he gets hungry by the aroma of the Biryani while I am cooking.
     
       Cooking Chicken Biryani is Time consuming.... But Patience pays at the end !!!

        I have cooked Chicken Biryani in a variety of ways. Each tastes delicious. But today I am sharing with you the tandoori chicken Biryani.






Preparation Time: 20 minutes
Cooking Time: 40 minutes

Ingredients:
  • Chicken Drumsticks 1/2 kg
  • Yoghurt 1 cup
  • Ginger garlic paste
  • Green Chillies
  • Rice 2 cups washed
  • Whole Spices - 1 Bayleaf, 1 inch cinnamon stick, 5 black peppercons, 3 cloves, 2 tsp shahi jeera, 1 star anise, 1 javitri, 3 cardamom pods
  • Oil
  • Salt
  • Browned Onions
  • Red Chilli Powder
  • Garam Masala
  • Biryani Masala
  • few strands of saffron in 1/4 cup milk
  • Corriander leaves
  • Mint leaves
  • ghee

 
 

Method:

1. Preparation
  • Clean the chicken Drumsticks. Marinate it with salt to taste, 2 tsp ginger garlic paste, 1 tbsp. red chilli powder, 1 tsp garam masala, 1 cup yoghurt, green chilies, chopped coriander leaves, chopped mint leaves & 1 tbsp ghee. Set it aside for atleast 30 minutes.
  • Also soak rice for atleast 30 minutes.

2. Cooking Chicken & Rice
  • Preheat the oven to 200 degree Celsius.
  • Add the marinated chicken in a oven proof bowl. Put the bowl in the preheated oven. Cook it for 40 minutes. You will see a lot of gravy created in the bowl. Its aroma is just so yummy. It tastes also yummy. (Who doesn't have ovens need not worry. You can also cook the chicken in a pan.)
  • Put a large vessel of boiling water. In a muslin cloth, add all whole spices except shahi jeera in a muslin cloth & tie them. Put these tied muslin cloth of whole spices in boiling water. Also add the shahi jeera & oil in the boiling water. Drain the water from the soaked rice. Put these soaked rice in boiling water. Let it boil till almost 90% done. Now Drain the water. Get rid of the whole spices. Season the rice with salt. Mix the rice carefully without breaking the grains of rice. Set it aside.
3. Layering Chicken & Rice
  • Take a non stick pan. Brush it with oil.
  • Add half chicken drumsticks & half gravy to it.
  • Add half rice above the chicken.
  • Sprinkle some biryani masala over it.
  • Add half of the saffron milk, half of the browned onions & chopped coriander leaves over the rice.
  • Now put the remaining chicken drumsticks & chicken curry over it.
  • Put the remaining rice over it.
  • Sprinkle some biryani masala over it.
  • Add remaining saffron milk, remaining browned onions & chopped coriander leaves over the rice.


  • Cover the pan with a tight lid.
  • Cook it on lowest flame for 10 minutes.
  • This will make the chicken & rice layers to mix with each other.
  • Serve hot !!

Tips:
  • You can reserve some of the chicken gravy in a separate bowl for enjoying it with the chicken biryani.
