Indo - Chinese Egg Fried Rice


                 Indo - Chinese Fried Rice needs no introduction. It is so popular with everyone. Here is my recipe for Egg Fried Rice. Hope you like it.
       





Ingredients:

  • Cooked Rice 2 & 1/2 cups
  • Spring Onions Finely Chopped 1/3 cup
  • Spring Onions Greens Finely Chopped 1/2 cup
  • Carrots Finely Chopped 1/4 cup
  • French Beans Finely Chopped 1/4 cup
  • 2 Eggs
  • 3 - 4 medium sized Garlic Cloves finely Chopped
  • Salt to Taste
  • White Pepper / Black Pepper
  • Soya Sauce
  • Vingar
  • Green Chili 1 split into two
  • Oil
Method:
  • Heat Oil in a wok on medium - high heat.
  • Break eggs into it. With a spatula, Stir it continuously till it gets scrambled. Don't make it hard. Keep the scrambled eggs soft.
  • Remove the scrambled eggs in a plate.
  • In the same wok, heat 1 tbsp oil.
  • Add finely chopped garlic. Once garlic turns a bit brown after around 20 - 30 seconds, add finely chopped spring onions, slit green chili, finely chopped French beans & finely chopped carrots. Sauté.
  • Add scrambled eggs, black pepper powder to this veggies. Mix.
  • Add cooked rice to it. Mix carefully without breaking the grains of rice.
  • Add salt to taste, some more black pepper powder, 1 tsp soya sauce & 1 tbsp vinegar. Mix again carefully.
  • Garnish with chopped spring onion greens.
Tips:
  • I like to add just a tsp soya sauce in the fried rice while cooking to retain the white color of the fried rice. You can add more soya sauce later while eating as per your taste.
  • You can also add vinegar as per your taste to the fried rice later while eating.
  • You can have schezwan sauce while eating fried rice.
  • Add 1 tbsp Oil to the cooked rice to make each grain of rice separate.
