We had been to Turkey for our 4th anniversary when I ate this veggie casserole. It was soooo super tasty. Oooooo.... Yummmm !!!
This dish is basically made by cooking all veggies on a low heat for a long time. Here is my version of making it...
Ingredients:
- 1 medium sized onion sliced finely
- 3 tomatoes diced
- 1/4 cup cauliflower florets
- 1/4 cup broccoli florets
- 8 - 10 mushrooms diced
- 1/2 capsicum diced
- 3 green Chilies slit
- 1 bayleaf
- 1 inch Cinnamon Stick
- Black Pepper to taste
- Salt to Taste
- 2 tbsp Oil
- 3 medium sized Garlic Cloves
- 1 cup water
- Italian herbs
- Grated cheese
Method:
- Heat a pan. Dry roast half of the diced capsicum pieces in the pan. Roast them till you see some black spots on it. Remove in plate.
- Preheat oven too 220 degree Celsius.
- In an oven safe bowl, add oil, finely chopped garlic, bayleaf & cinnamon stick. Place this bowl in the preheated oven for 10 minutes.
- Add sliced onions & green chilies to the bowl. Keep in the oven for 20 minutes.
- Now add carrots, tomatoes, mushrooms, roasted capsicum & remaining capsicum to the bowl. Also add salt to taste, 1 cup water & 1 tsp Italian herbs. Place bowl back to the oven & heat it for around 50 - 60 minutes.
- Garnish it with grated cheese. (Optional)
- Serve hot with bread or pav or rice !!
- Add black pepper to taste if necessary.
Tips:
- You can add more veggies like cauliflower, aubergine, French beans etc.
