Naankhatai is a famous traditional recipe. Below is my version of naankhatai. Very simple to make. Enjoy at your teatime.
Ingredients:
- Unsalted Butter - 200 gm (@ Room Temperature)
- Sugar 175 gm
- Maida 200 - 225 gm
- Cardamom Powder - 1 tsp
- Nutmeg powder - a pinch
- Chopped Dry fruits (Almonds & Pistachios)/tooti frooti for garnishing
- Whisk Butter in a bowl (The butter should be soft & not melted)
- Add sugar to it & Whisk it till foam is formed
- Add cardamom powder. Whisk it again for few seconds.
- Add Maida & mix it well with your hands till a soft dough is formed.
- Now divide it into 24 equal parts.
- Make a small ball out of each part. Flatten it a bit. Place on a oven tray. Do the same with each part.
- Garnish it with dry fruits/tooti frooti
- Place the tray in preheated oven (200 deg C) for 10-12 mins
- Once you see the cookies startng to brown, remove them. Let them cool & store it in a airtight container. Enjoy at teatime !!
Tips:
- Add Maida in batches. & mix the batter until a soft dough is formed.
- Timing for baking the naankhatai may vary. Bake it until it turns golden color on the top. Remove it immediately or else it will get dark soon.
