Carrot Fudge !! You can also call it Carrot barfi. Its basically carrot halwa. A twist to the traditional Carrot Halwa !! Enjoy it !!
Ingredients:
- Grated Carrots - 2 cups
- Milk - 2 cup
- Sugar - 1 cup
- 1 tsp Cardamom Powder
- Almonds & Pistachios for garnishing
- 2 tsp ghee
- Milk Powder 2 tbsp
- Wash, peel & grate the carrots.
- In a heavy bottomed non stick pan, boil Milk on a medium flame till it is reduced to half.
- Heat ghee in another pan
- Add grated carrots to it.
- Cook the carrots on medium flame for 5 mins.
- Add sugar & let it cook on medium flame till the sugar melts & carrots become soft.
- Add the reduced milk to the pan of carrots. Keep cooking till the carrots mixture thickens.
- Add cardamom powder & milk powder to it.
- Cook it until all the moisture evaporates from the mixture.
- Grease a tray with ghee & add the misture to it. Garnish it with pistachios & almonds. Let it cool down completely. Cut into desired shapes.
- Keep stirring while making carrot fudge.
