Today I am going to share with you a different style of egg bhurji. Its called Bombay Anda bhurji. You find it on the streets of Mumbai. Give it a try. Its way better than the normal one.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Ingredients:
- 2 onions finely chopped
- 1 tomato finely chopped
- Oil
- 3 eggs
- Salt to taste
- 1/4 tsp Turmeric powder
- 2 tsp pav bhaji masala
- 1/2 tsp red chili powder
- Coriander leaves for garnishing
Method:
- Heat oil in a non stick pan.
- Add finely chopped onions. Sauté them till translucent.
- Add finely chopped tomatoes. Sauté till tomatoes turn soft.
- Now add all the dry masalas - turmeric powder, red chili powder, pav bhaji masala & salt to taste.
- Cook for a minute or so.
- Now add 3 eggs. Stir well. Cook for 2 minutes till the eggs are cooked. Don't let the bhurji dry out completely.
- Garnish with chopped coriander leaves.
- Serve hot with pav or chapatti.
