Basoondi


                 Basoondi is my hubby's all time favorite dessert. He just loves it. On any special occasion, basoondi is the first choice.  May it his birthday or some promotion news or any festival, basoondi is mostly made. He likes it to be nice thick consistency.

                 Some people like to have it along with puri. But in my family its eaten without puri.. just like that as a dessert !!! Its so creamy. :)
 
                  This is a very basic recipe.




Ingredients:
  • 1 litre Milk
  • 1/2 cup Sugar
  • 1/2 tsp Cardamom Powder
  • few saffron strands
  • 1/2 cup Chopped Dry Fruits
Method:
  • Take a heavy bottomed non stick vessel. Add milk to it.
  • Bring the milk to boil in a pan and simmer it till it gets reduced to half. 
  • Add sugar and cook for some more time till it gets thickened. 
  • Now add cardamom powder and put off the flame. 
  • Allow it to cool. Garnish with saffron & chopped dry fruits. 
  • Basundi is ready. Serve chilled.

Tips:
  • Before adding milk to the pan just wash it with cold water. This helps to avoid milk sticking to the bottom of the pan.
  • Also keep stirring milk often while its boiling.
  • Adjust sugar according to your taste.
