Chatpati Veg Frankie


               In my college days, me & my friends used to have Frankie at Shivaji Park. It was so yummy. There was a wide range of frankies there. I do miss those frankies. Here is my version of Veg Frankie. Hope you enjoy it.
          
              Veg Frankie is a nice snack item. It is so filling you can also have it in your lunch or dinner.





Cooking Time: 30 minutes

Ingredients:

       Roti
    • 1 cup wheat flour
    • 1 tbsp. all purpose flour
    • Salt to taste
    • Warm water
    • Oil
    • Ajwain
     Filling
    • 3 big potatoes - peeled & mashed
    • 1/2 cup paneer grated
    • Salt to taste
    • 1 tsp red chilli powder
    • 1/2 tsp cumin seeds powder
    • 1/2 tsp garam masala
    • 1 tsp aamchur powder
     Salad
    • Finely chopped onions
    • Finely chopped tomato
    • Finely chopped capsicum
    • Lemon juice
     Other Ingredients
    • Frankie masala or Mix 1/2 tsp Red chilli powder & 1/3 tsp black salt
    • Green coriander chutney
    • Oil
Method:
  • Salad: Mix all the ingredients for the salad & set aside.
  • Roti Dough: Mix wheat flour, all purpose flour, salt to taste, ajwain. Add water little by little & make a dough out of it. Add a tsp of oil to the prepared dough. Let it rest for atleast 10 minutes.
  • Filling: Mix all the ingredients for the filling. Make 4 or 5 patties in the form of a long cylinder(just like in the below pic) from the filling mixture. Heat a tawa. Drizzle a tsp oil on the tawa. Place these rolls on the tawa. Roast them on tawa until browned from all sides. Remove it on paper napkin. Set aside.


  • Roti: Make 4 - 5 equal sized balls from the roti dough. Roll out each ball into a thin circle. Cook each roti on a heated tawa from both sides. Keep aside.
  • Assembling the Frankie:
    • Take a roti. Apply green chutney to one side of the roti.
    • Place a cooked cylindrical patty on it. Sprinkle Frankie masala or the mixture of red chili powder & black salt on it.
    • Also put the salad mix on it. & also drizzle its lemon juice(from the salad) on it & the roti.
    • Now roll the roti. Wrap it in a aluminium foil.
    • Repeat the above assembling steps for each roti.
  • Serve hot !!
Tips:
  • You can also a lettuce leaf in the Frankie making it more healthy for kids.
  • You can definitely add veggies of your choice in it.
