Egg Curry - My Style

 
                 Today I am going to share with you all a very interesting recipe - Egg Curry !!! Everyone has their own way of making egg curry !! & below is my way of making it !!! My hubby is so fond of this egg curry that he wants it atleast once every week !! ;) ;)
   
                  I have seen maximum people putting boiled eggs in the egg curry. But I don't make it this way. I just break eggs & slide them in the curry & let the eggs boil in the curry. This way it absorbs the taste of the curry as well. Do try it this way !! Quite unique !! You just have to take some care while doing so. Shared the tips for the same below.




Preparation Time: 10 minutes
Cooking Time: 30 minutes

Ingredients:
  • Onion 1 large chopped roughly
  • Dry Grated Coconut 1/3 cup
  • Tomato 1 medium chopped
  • Whole Spices - 1 inch cinnamon stick, 5 black peppercons, 2 cloves, 1/3 tsp fennel seeds & 1/2 tsp poppy seeds
  • ginger garlic paste 2 tsp
  • Oil
  • Salt to taste
  • Red Chili Powder 1 & 1/2 tsp
  • Coriander Powder 1 tsp
  • Garam Masala 1 tsp
  • Coriander leaves
  • Eggs 4
Method:
  • Heat 1tbsp oil in a pan.
  • Add whole spices to it. Sauté for few seconds until you smell the aroma of the spices.
  • Add roughly chopped onion. Sauté them for 2 minutes. Add ginger garlic paste. Sauté for few seconds.
  • Once onion turn translucent, add grated coconut. Sauté till coconut turns golden brown.
  • Now add roughly chopped tomato. Cover with a lid & cook for 2 minutes until the tomatoes are cooked.
  • Let the mixture cool down. Then grind it into a smooth paste along with coriander leaves, red chili powder & coriander powder. Add water while grinding if necessary.
  • Heat 1 tbsp. oil in the same pan.
  • Add the ground puree to it. Let it cook for 4 - 5 minutes until oil separates from the gravy. Cover with a lid.
  • Add water to the gravy depending on the consistency you desire. Also add salt & garam masala to it. Let it boil. Once it starts boiling, lower the heat to low - medium.
  • Now break the eggs and slip them into the boiling curry one at a time. Drop them carefully without disturbing the yolk. Also take care that the eggs are at a distance from each other while dropping them. 


Drop the eggs as shown above.

  • Pick up some curry from in between the eggs & pour it over the eggs. Cover with a lid & cook for 5 - 6 minutes until the eggs are boiled.
  • Once eggs are boiled, switch off the heat. Garnish with coriander leaves.
  • Do try this my way of cooking egg curry !!!
  • Serve hot with steamed rice !!
Tips:
  • When you place eggs in the curry for boiling, it is very important to lower the heat to low - medium. Let the eggs cook at low - medium heat. Or else the eggs will stick to the bottom & get burnt.
  • Do not stir in between at all until the eggs get cooked !! Or else the eggs will spread in the curry which we don't want.
