Sandwich Dhokla


           Sandwich Dhokla is a nice combination of white & yellow dhokla. It has a layer of green coriander chutney in between. It is an instant dhokla.




Ingredients:
  • Yellow Batter:
    •  Gram flour (besan),sieved 1 cups 
    • Yogurt,beaten  1/2 cup
    • warm water 1/2 cup
    • Salt  to taste
    • Turmeric powder  1/4 teaspoon
    • Sugar 1/4 tsp
    • Green chilli-ginger paste  1/2 teaspoon

  • White batter:
    • Sooji  1 cup
    • Yoghurt 1/2 cup
    • Warm water 1/2 cup
    • Salt to taste
    • green chili-ginger paste 1/2 tspn

  • Other Ingredients:
    • Oil  1 tablespoons
    • Lemon juice  1 tablespoon
    • Soda bicarbonate  1 teaspoon / Eno 1 small sachet
    • Green chutney (Grind lots of coriander leaves, salt & green chilies to a thick paste)

  • Tempering:
    • Oil 1 tbspn
    • Mustard seeds  1 teaspoon
    • chopped green chilies 3-4
    • curry leaves 8 - 10
    • Fresh coriander leaves finely chopped
    • Coconut scraped  1/2 cup

Method:
  • Yellow batter:
    • Mix Yoghurt & warm water. Add besan to it & mix it well so that no lumps are formed.
    • Add salt, sugar, turmeric pwdr & green chili ginger paste to it & leave it to rest for atleast 1 hour
  • White batter
    • Mix yoghurt & warm water. Add sooji to it. & mix it well so that no lumps are formed.
    • Add salt & green chili-ginger paste to it. Leave it to rest for atleast 1 hour.
  • Eno
    • Mix Oil, lemon juice & eno in a small bowl. Add half of it to the yellow batter & other half to the white batter.
  • Cooking Dhokla 
    • Pour the white batter into a greased tray & put it in the steamer.
    • Cover with lid & steam till half done.
    • Take the tray out & apply green chutney to it evenly all over it.
    • Pour the yellow batter over it & put the tray back in the steamer. Steam it for 8-10 mins
    • Remove the tray from the steamer & let it cool completely.
    • Once cooled, cut it into desired shapes.
  • Tempering
    • Heat oil. Add mustard seeds. When they crackle add chopped green chilies, curry leaves & asafetida over it. Switch off the flame. Immediately add 1 tbsp. water to it. Mix. Spread  this over the dhokla.
    • Garnish it with chopped corriander leaves & scraped coconut.
Tips:
  • Add eno to the batter just before steaming it.
  • If you feel there are no bubbles in the batter, add 1 tsp more eno...
