Eggless Wheat Oat Chocolate Chips Cookies



                   I have always made cookies with all purpose flour. Today I thought lets give it a try using wheat flour. I made them & wow. They tasted equally great. I made eggless version. I also added some oats to this recipe. Try this healthy healthy cookies for your kids. They can have them for their small lunch times or just when they are home from school. You can take them for your picnics too.




Ingredients:
  • 100 gms (1/2 cup) butter at room temp
  • 140 gms (1 cup) sugar powder
  • 1 tsp vanilla essence
  • 1 - 2 tbsp. Milk (Optional)
  • 60 gms (1/2 cup) oats
  • 180 gms (1 & 1/2 cup) wheat flour
  • 2 tbsp. cocoa powder
  • 1 tsp baking soda
  • Choco Chips1 tbsp.


Method:
  • Preheat oven to 180 degree Celcius.
  • Mix all dry ingredients - wheat flour, cocoa powder, oats & baking soda. Keep aside.
  • Beat butter in a bowl till its creamy. Add sugar powder to it. Mix with a spatula first. Beat it with a beater. Add Vanilla essence to it. Mix again.
  • Add the dry ingredients mix to it.
  • Stir well with a spatula. Don't over mix it.
  • Add the chocolate chips to it. Mix again well.
  • Make small round balls from it. Flatten it a bit. Place it in a oven tray.
  • Keep the tray of cookie balls in oven.
  • Bake for around 12 to 15 minutes.
  • Later remove on a rack. Let them cool down. Then transfer them to an airtight container.


Tips:
  • You can replace wheat flour with all purpose flour if you want.
  • You can also use half wheat flour & half all purpose flour.
  • If you don't have chocolate chips, just take a chocolate bar of your choice & chop them in small chunks.
  • You can skip oats if you don't like them.
  • If you feel the dough very dry add a tbsp. of milk.
  • If you feel the dough is very moist, add a spoonful of flour or oats. or just refrigerate it for some time. The dough becomes tight.
  • Baking time will vary depending on the thickness of cookies & quantities. 
  • If you want chewy cookies, baking time of 12 minutes is perfect. But if you want crunchy cookies, bake for 3 - 4 minutes extra. But keep an eye, they might get burnt soon.

Spicy Minty Besan Sev / Spicy Minty Gram Flour Noodles


                     Its spicy sev. Its generally made during Diwali festival. Its made using gram flour. I gave a small twist to it. I added some minty flavor to it. Try for yourselves this version. 
              




Ingredients:
  • Gram Flour 3/4 cup
  • Rice Flour 1/4 cup
  • Salt to taste
  • Red Chili Powder 1 tsp
  • Coriander Powder 1 tsp
  • Dried Mint leaves 2 tsp + a pinch
  • Chaat Masala a pinch
  • Ajwain 1/3 tsp
  • Turmeric 1/2 tsp
  • Water as required
  • Oil

Method:
  • Mix gram flour, rice flour, salt to taste, red chili powder, coriander powder, dried mint leaves, ajwain & turmeric powder. Mix well.
  • Add water little by little to form a soft dough.
  • Add 1 tsp oil. & give it a few seconds knead.
  • Leave it to rest for 10 minutes.
  • Give it a knead again.
  • Heat oil in a kadhai.
  • Prepare the sev mould by inserting the sev attachment. (Use fine or thick sev attachment). Fill the gram flour dough in sev maker mould.
  • Press the dough in hot oil in circular motion.
  • Fry sev till golden in color from both sides.
  • Once done, remove sev on paper napkins.
  • When it cools downs, keep in a airtight container.
Tips:
  • Sprinkle a pinch of dry mint over prepared sev.
  • Sprinkle a pinch of chaat masala over prepared sev for more flavor. Its optional but tastes amazing.
