Do your kids roar with hunger when they are back home from school ? How about something ready before hand which they love a lot ? Cupcakes ??? Isn't this a lovely idea ?? Just make them when they are in school & hand them over once they are back. These cupcakes will satisfy your kids hunger & also they will enjoy it a lot. This will definitely bring a smile on your face. One more advantage is they last for a week. So you don't have to worry about what to feed your kids once they are home for atleast a week. ;-)
These cupcakes doesn't take a long time for preparation & also not for cooking. Just try them
Ingredients
- Flour 1 cup
- Cocoa powder 1/2 cup
- Instant coffee powder 1 tsp
- Thick curd 1 cup
- Sugar 3/4 cup
- Baking powder 1 1/4 tsp
- Baking soda 1/2 tsp
- Salt a pinch
- Oil 1/2 cup
- Vanilla essence 1 tsp
- Chocolate Chips (1/2 cup)
- Walnts chopped (1/2 cup)
Method:
- Preheat oven to 200 C
- Sift together flour, cocoa powder, coffee powder, baking powder, baking soda & a pinch of salt. Set aside.
- In a mixing bowl, beat together sugar and yogurt with a hand mixer till creamy. Add vanila essence & Oil & beat again.
- To this add the flour mix in 3 batches. Mix with a rubber spatula after adding each batch of flour mix.
- To this add chocolate chips & walnuts (Leave handful of each aside). Mix.
- Now pour 1/4th of cupcake mould with this batter.
- Top each cupcake with leftover chocolate chips & walnut pieces.
- Bake the cupcakes for 25 - 30 mins or until a toothpick inserted in the center comes out clean.
Step by Step Picture Illustration:
Take together all flours - all purpose flour, baking powder, baking soda, cocoa powder, coffee powder & a pinch of salt according to the measures mentioned above. Set it aside. |
Mix together curd & sugar in a separate bowl |
Whip curd & sugar mixture till creamy |
Add oil & vanilla essence to curd - sugar mixture. |
Beat the curd - sugar - oil - vanilla essence mixture |
Sieve the flour mix to the curd mixture. |
Add the flour mixture to curd mixture in 3 batches. |
Fold the flour mix in the curd mixture with a spatula gently after each batch. Do not beat this using hand mixer or anything. |
Add to the batter some of the chocolate chips & walnut pieces leaving some aside. |
Fill 1/4th of the cupcake moulds with the batter. Top it up with leftover chocolate chips & walnuts. Bake it in oven for 25-30 mins or until toothpick inserted in it comes out clean. |
Tips:
- You can also make normal cake out of this batter.
- If you feel the mixture is too dry, add a tbsp. oil in the cake batter & mix.
- Check if the cupcake is cooked by inserting a toothpick in the center of the cake. If it comes out clean, cake is cooked.
- If you don't have readily available chocolate chips. Just take a chocolate bar of your choice & chop it roughly to get chocolate chunks. Use this instead. I have also used the same.
- You can also add other dry fruits of your choice.
