Veg Pulao



              How about a tasty healthy pulao different from the everyday menu of roti, sabzi, dal & Rice ?
     
              It is a one course meal. It fills your stomach easily.


 


Ingredients:
  • Whole Spices - 1 Bayleaf, 7 - 8 black peppercons, 2 cloves, 1 tsp shahi jeera, 1 inch cinnamon stick, 2 cardamom
  • 2 cups rice
  • 4 green chilies slit
  • Salt to taste
  • 1 small potato cut in small pieces
  • 3 - 4 baby corn cut in small pieces
  • 1 medium size carrot cut in small pieces
  • 1/4 cup French beans cut in small pieces
  • 1/4 cup small cauliflower florets
  • 2 tbsp. green peas
  • 1 onion sliced finely
  • 1 tbsp ginger garlic paste
  • Red Chili powder a pinch (Optional)
  • Oil
Method:
  • Cook rice normally the way you cook just with a tbsp. of oil. Use a fork to separate grain from each other.
  • Heat oil in a wok.
  • Add all whole spices & sauté for 20 - 30 seconds or until you smell the aroma of whole spices.
  • Add onions, green chilies & ginger garlic paste. Sauté till onion turns golden brown.
  • Add all the veggies now. Stir fry them. Add little salt & red chili powder just for the veggies. Sauté them. Cover the wok with a lid & let the veggies cook for around 7 - 8 minutes on low - medium heat. Stir well in between. Check if the veggies have cooked. If not cook for a couple of minutes.
  • Add cooked rice & salt (remember salt is added already for the veggies. So add less salt now). Stir well.
  • Cover the wok again with a lid & let the pulao cook on low flame for 5 minutes. Switch off the flame.
  • Enjoy the pulao with some raita & papad.
Tips:
  • Add any veggies of your choice.
  • While cooking veggies, the cooking time may vary from the time I mentioned since it depends on the size & thickness of the veggies you have chopped them.

No huss-fuss Besan Ladoo !!!

 

                  How about traditional Besan ladoos but without much effort in it & very quick ? Yes Yes  You read it right !!
                   
                  Making besan ladoo is a lot of effort if making in a pan. You have to stir it continuously or else it sticks to the bottom of the pan. But how about if you are making it in microwave ? No need to stir it continuously. Also gram flour gets roasted in just 5 minutes if done in microwave or else you have to spend 30 minutes if making in a pan. Also microwave safe bowls get cleaned easily unlike pans.
 
                   Thinking about this way is already relaxing, isn't it ? So why not give it a try !!!

 
 

Ingredients:
  • Gram Flour (Coarse Powder) - 1 & 1/2 cup
  • Sugar powder - 1/2 cup 
  • Cardamom powder - 1/2 tsp
  • Almonds Cashewnuts (chopped in small pieces) - 1 tbsp.
  • salt a pinch
  • Ghee 4 tbsp.
 

Method:
  • Take a microwave safe bowl. Add ghee to it. Microwave it for 30 seconds.
  • Remove the bowl.
  • Add coarse gram flour to it. Stir well.
  • Microwave it for 1 minute. 
  • Remove the bowl. Stir. Again Microwave it for 1 minute.
  • Remove the bowl again. Add chopped almonds & cashewnuts, cardamom powder & salt to the bowl.
  • Now again microwave it for 1 minute.
  • You will now smell the aroma of roasted gram flour.
  • Remove the bowl again & Stir the mixture.
  • Microwave it for 20 seconds the last time.
  • Remove the bowl & stir. Remove the mixture in a plate & let it cool.
  • So in total the mixture is microwaved for 3 minutes 20 seconds.
  • Once the mixture cools down, add sugar powder to it. Stir the mixture well with your hands. Remember to break the lumps of sugar powder with your fingers.
  • Take little mixture from it & form a round ball out of it. Garnish it with a nut of your choice like raisin or pistachio or cashewnut.
 
 
Tips:
  • Use coarse variety of gram flour. If not available, & you are using fine variety, add 1 tsp of semolina along with gram flour. I do so since I get fine variety of gram flour here. It gives a nice coarse texture to besan ladoo.
  • You can add sugar according to your taste. Before shaping the ladoos, check for sweetness & adjust taste accordingly.
  • If you feel the mixture is dry, add more ghee. You can add 1 tbsp. more ghee in the beginning itself, the taste is even more amazing.
